Now that's just silly debk. ::)  Pecans should be saved for Pralines. :hammer:


Ingredients:
•2 cups brown sugar, firmly packed
•1/4 cup water
•1/4 cup evaporated milk
•2 cups pecan pieces and halves
•2 teaspoons vanilla
•3 tablespoons chilled butter, cut in pieces
Preparation:
Combine sugar, milk, and water in a 2-quart saucepan; heat to boiling stirring constantly. Cook until mixture reaches soft ball consistency (235°).Remove from heat; stir in pecans, vanilla, and butter. Immediately drop by tablespoons onto wax paper

And even I can make those.

(fudge, on the other hand, not so much, usually it is a good idea to buy plenty of French Vanilla ice cream when I try... :whistling: )


Now this is just cruel, posting these tasty recipes. It's as mean as SR getting the chocolate chip whoopie pies (2 cookies with a lot of thick ooey gooey cream between them) at the Amish store nearby.  :-)

I've been on the South Beach diet since May and have lost about 20 pounds. I'd like to lose a bunch more, but have hit a plateau. It's already helping my knees (along with the cortisone shot that the doc gave me a couple of weeks ago).

Congrats Thor on the massive weight loss. I'm jealous, but happy for you.

Which brings up an interesting question, "Why is there never enough filling when I make woopie pies?"   After years of making them I now just double the filling recipe automatically. My woopie pies are to die for, ditto my dipped chocolate covered cherries ( I make a kick a$$ fondant).  Over the last many years I have drastically cut back on making sweet treats.  I use to make a mean cream puff / eclair too.  M/zeit dissapeared my candy thermometer years ago, I took it as a sign.

I too commend Thor on his loss.

My stepgrandmother was from Denmark, and she would make "Danish pastry" with puff pastry piped out onto a cookie sheet. Pipe out in an closed "s" pattern, doing 3 rows the length of the pan. Bake the same way you would puffs or eclairs. When it cools, spread raspberry jam over it, and then white "drizzle" frosting (powdered sugar and milk). My kids always insist on it on Christmas morning. I thought it was just her way of making pastry, but a friend brought me bake a cookbook from Minnesota that is just Scandinavian baking, and it's in there.

This is a great recipe for the morning coffee during the holidays.  Easy to make, it travels well.  *I substitute almond pieces in the frosting.

Danish Puff

Ingredients
1 cup all-purpose flour
1/2 cup butter, softened
2 tablespoons water
 
1/2 cup butter
1 cup water
1 teaspoon almond extract
3 eggs, beaten
1 cup all-purpose flour
 
1 cup confectioners' sugar
1 teaspoon almond extract
1 tablespoon milk, or as needed
2 tablespoons candy sprinkles*


Directions
1.Place 1 cup of flour in a medium bowl. Mix in butter using a fork or a pastry blender. Sprinkle 2 tablespoons of water over, and stir with a fork until dough comes together. Divide into two balls. Pat dough into two long strips on an ungreased baking sheet, about 14 inches long and 3 inches wide. Set aside.
2.Preheat the oven to 350 degrees F (175 degrees C).
3.In a saucepan, combine 1/2 cup of butter and 1 cup of water. Bring to a rolling boil. Add 1 teaspoon of almond extract and remove from the heat. Immediately stir in 1 cup of flour until the mixture pulls away from the sides of the pan. Gradually stir in the eggs until well blended. Divide evenly, and spread over the two crusts on the baking sheet.
4.Bake for 1 hour in the preheated oven. Allow to cool almost to room temperature before frosting.
5.To make the frosting, mix together the confectioners' sugar, 1 teaspoon of almond extract and a splash of milk in a small bowl until smooth. Add more milk if necessary to make a pourable glaze. Drizzle over the Danish puffs, and decorate with candy sprinkles.

I don't eat sweets but I do enjoy making them for my family so I am going to make that! 

Are there any other topping suggestions? to give flavors?  what about a chocolate glaze?  will that work?

Exactly, congrats on the will power necessary to abstain from loading up on the desserts.  After all it is the consumption of, not the recipe for, that is responsible for the weight gain.  :hammer: 




Gina, I have never tried chocolate what I like about that recipe is the almond flavor.
But, there is no such thing as bad chocolate.

Grand total weight loss to date is approx 65 lbs.  :-) :hyper:  I DID strain, pull or otherwise injure some muscles in my back. I guess I pushed myself a little too hard.

Still holding at the ~75 pounds lost. However, I haven't been doing much exercise since my overnight stay in the Hospital. Had an echocardiogram last Wednesday. Stress test is on this coming Thursday. Seems to me that my problems might have been just as simple as a dehydration issue as I haven't been drinking as much water since it's cooled down. At least that's what I'm hoping.

If you ain't pissing 12-14 times per day, you're dehydrated. (That what it seems like to me anymore.....)   :p

Well, a new milestone has been attained...... 230 lbs tonight AFTER dinner... That's a total of 90 lbs in less than  a year. I've kept it off, too, other than a few plateaus.
