WHY is my bread sticking in the pan?

I've been making bread for several years in a long (12") aluminum pan using store bought spray oil, usually canola. Since I found a new recipe that seems to work better if I mix two loaves at the same time, I bought another identical pan for when I make that recipe. No problem, no sticking.

In the interests of the environment, saving money, etc. I had bought a refillable oil spray bottle which I filled with canola oil. I used up the store bought spray oil and used the refillable one for the first time the other day. Couldn't get the blasted loaf out of the pan. I finally got it out but ripped the side off, destroyed the structure of the loaf so it make disintegrating sandwiches. I've been using the newer pan to 'age' it, but I never seasoned either pan.

Today I made another loaf in the same pan. To make sure it would not stick, I poured oil into the pan rather than spray it. Spread the oil all over the pan, the edges GENEROUSLY. Damn thing stuck all the way around the edge. This time I waited until the loaf was cool and got it out, hopefully without tearing up the insides.

I've never had bread stick like this! What am I doing wrong here? Should I try shortening to grease the pan next? Season it like I would cast iron? Change oils - something other than canola or olive oil? I use oil in my bread rather than butter as part of my reducing saturated fats but that has not been a problem for the several years I've been doing that.

The recipe I am currently using is a variation of Floyd's Honey Whole Wheat bread so it is slightly sticky - but it is the same as I have been using up until this week.

Going to the grocery store and buying bread is simpler, cheaper, cleaner, and easier.

1. Sounds like it's just a new pan problem

Maybe dusting the oiled pan with cornmeal or semolina will help until the pan gets seasoned.

2. I've always had better luck greasing pans with solid vegetable shortening instead of vegetable oil. I don't know why, but it just works better for me whether I'm baking bread or cakes. I find the same holds true when seasoning my cast iron.

I have better luck using real butter and a little flour. My granddaughter and I frequently bake brownies, and we find this works the best!

Frank, I know you think it's cleaner and easier, but you just can't beat the smell of fresh baked bread in the house.  It's kind of fun if you have a Sunday afternoon to kill or something.

I know, I know, madam; I just recently did the same with home-made stew, while it's just cheaper, cleaner, quicker, to buy a can of it at the grocery store.

It's fun if one has the time, which sometimes one does.

And yes, one can't beat the aromatic odor.

But the real objection here, as it always is with the cooking and baking primitives, is that the primitives try to make all this home-made tinkering out as a virtue, when really it's just idle recreation.

If decent and civilized people do it, there's no objection, because decent and civilized people don't try to make it seem more than what it is.  And so if you do it yourself, madam, no objection from franksolich.

"Toots" usually makes enough to feed the whole famdamly so we end up freezin' the stuff for when she doesn't feel like cookin'. I do have to admit, it makes a damn good meal when I get done feedin' the glue factory when the temp is -the witchc's tits!!

It's not the type of oil you uneducated moronic DUmbshit.

It is EMULSIFIERS! The spray canned canola oil has emulsifiers added to allow it to stick to the sides of the metal pan under high heat. Canola oil straight just drains off to the bottom of the pan.
That is called "better living through chemistry", DUmbASS. Surely you doped-up DUmmys don't expect me to believe you are not living that dream?

I spent a long time perfecting a recipe for high protein, low fat, whole grain bread so it's rare we buy bread at the store. I've been using this recipe long enough that I almost don't need to look at it anymore. Bread is one of those foods where quality matters and the only way to know what's in it is to make it myself.
