Oh my.

Dear old sweet Lu's been laying down on the job the past few days, depending upon the drones to do her work.

What's for dinner this Saturday night, March 22?

We are having leek/potato soup, a pickled chayote salad and probably simple quesadillas with roast peppers.

And we will probably eat them one course at a time, cause that's the kind of mood I am in.

Crashed not one, but two big parties last night with visiting guest and another friend and ate everything in site.

For those who don't know, the cbayer primitive and her eccentric English husband are boating down the western coast of Mexico, after which they plan to go through the Panama Canal, and then up to New Orleans.

They've been floating for a while, but it looks as if they're still in Mexico.

2. I cheated.

We're busy trying to get a room cleaned out to be recarpeted, so I just bought a wild mushroom quiche for dinner. It was cheaper than buying a fast food meal, and faster to boot, since I just eat em cold.

3. Sweet and sour chicken

Rather than the usual stir fry, I'm going to try it in the oven instead. Chicken thighs with sliced carrots green peppers, onions, and pineapple. I basically following the traditional sauce to mix everything together.

I've never done it in the oven before, so I'll check it every 15 mins to see if the sauce evaporates. If it does, I'll just keep adding pineapple juice.

I'm going in...cover me!

<<<thinks this one's ^^^ queer, of the limp-wristed high-pitched voice flaming sort.

4. Alfredo Rotini w/chicken, mushrooms, tomato and Parmesan

It was going to be smoked salmon alfredo, but I cut my thumb with one of my super crazy sharp knives. So I went with the already chopped chicken breast that I had prepared for chicken salad earlier.

I don't think the Ginsu knife folks will be calling me any time soon to make a TV spot for them.

5. The RG is cooking tonight

He's making chicken w/potatoes and red pepper relish. Also pasta w/ragu sauce. I'm making the salad.

We're having a guest. Will be fun.

Earlier, we went out to lunch and had a terrific time. Might post more about that later. Have to go make salad now, though.

cbayer, can you tell more about the chayote pickled salad? I passed some over at the market the other day 'cuz I didn't know what to do with them or if I would even like them.

9. I sooo love deep dish!

Sure, I'll eat pizza anyway it comes, but I was fortunate enough to have my first college roommate come from Chicago. He used to make a deep dish in an iron skillet, and it changed the way I look at pizza.

It's the only time I'll eat a pizza with a fork! One of these days I'll try to reproduce what he did, but I don't think it will come out the same, since we were dipping quite heavily into the beer stock during his 'lesson'.

10. It's wonderful!

I made this one. Trader Joe's dough, a can of diced tomatoes, oregano, Italian sausage and mozzarella. Very simple.

And finally, Judy, taking time off from reading brochures and booklets advertising the services of different old folks' homes with special units for the senescent:

11. stacked chicken enchiladas...

...made with some beautiful white corn tortillas from Trader Joe's ---mmmm they smell so good---and some black beans, cubed zucchini and diced red onion that were caramelized separately, black olives, lots of cheddar, chili powder and cumin, and a can of diced tomatoes over the top. Served with snappy radishes, cherry toms, and limeade.
apres moi, le deluge

If it is like her vomit soup then the salad probably is a few rotting vines mixed with tofu and soybeans then topped with goose crap and calf scours.
