What's for Dinner ~ Wednesday ~ December 25th ~ Christmas Day Edition
I'm starting this a little early because it will be busy around here the next day or so.
I haven't felt well enough* to have our neighbor over for dinner in months, but he will be coming for Christmas dinner. Looking forward to it! And then we have company coming for the weekend, either Thursday or Friday.
Anyway... we aren't doing a traditional Christmas dinner this year... ours is more of a summer meal, but it's what everyone is in the mood for!
Our friend Alan is making a spiral cut ham and his wonderful bbq baked beans.
I'm making deviled eggs, potato salad, and a weird southern pineapple casserole recipe that everyone here loves. It will go well with the ham.
Desert will be fresh fruit, pumpkin pie (Alan makes it for me when he comes to dinner because it's a favorite of mine) and I'm also making chocolate truffles.
Not a fussy meal, and I'll do my part of it tonight, so I'll be able to enjoy the day tomorrow.

1. Making the sweet potato pie tonight

2. I thought about sweet potato pie, love it...but the pineapple
stuff is sweet, so I figured we had enough dessert-y things on the menu. I do have pie envy though...love sweet potato anything.*
*that's why dear old sweet Lu has piles.

3. Whole roasted duck
with roasted acorn squash, garlic green beans. I think I will add spuds to the roasting pan with the duck. There's something about spuds cooked in duck fat.
Friends will bring the deserts and/or additional sides.
Hope you all have a great day... and no kitchen accidents!! And if you get frustrated, just pour another glass of vino...
Edit: Oh yeah, forgot the raspberry dipping sauce for the duck. I should have made a compote, but decided on being lazy.

11. The duck came out awesome!
450F for 1 hour, dropped the temp to 350F for 20 mins. I was worried that the breast meat would dry out, but it came out moist (although well done, which I knew would happen).
Not much in the way of leftovers, but I saved the carcass and meat scraps. Time to make duck stock.

5. Leftovers from yesterday.
Due to schedule hubby got the day off a day early. I take advantage of the day to make a meal that takes more time. So leftover brisket, potatoes and will make a vegie.
Just don't take the cardiologist. Two days of red meat!!!! Bad, bad me.

6. We are not really doing Christmas (other than playing the Messiah, which is my much treasured tradition). And DH is feeling fluish.
But I am going to do some cooking.
First a Spinach soup with masa/cheese dumplings for the sick one.
I am going to try and make my first gelatin dish. They make it here with fresh fruits and multiple layers. I am going to make a tres leches layer and a fresh strawberry layer.

8. we get to learn how my pastrami turned out
something went awry with the rye bread *rimshot* so i picked some up yesterday. we'll have pastrami and corned beef sandwiches and baked potato soup.

9. Breaded sauteed pork chop, asparagus, mashed sweet potato. Cheese cake. A movie.
I'm lending a hand for set-up at the local Congregation Beth David's Christmas community meal downtown, visit with some friends and will get back early this afternoon to make a meal here. Low key all around.

10. I just put the raspberry cobbler in the oven.
My brother says they've got lobster tails, some kind of shrimp dish, and an assortment of sides.
When I was talking to my brother, my niece hollers "What kind of cobbler is he bringing?"
