I'm guilty of it. I just think that "methinks" is a fun word and I enjoy saying fun words.

All jokes aside, it probably derives from the famous Shakespearean quote "methinks the lady doth protest too much."  From that derives other pithy observations...

Me thinks the word "methinks" is kind of an outdated fad like ending every sentence with "ya know?", but has just stuck with some people.
