I'm making chili tonight. Beans are included: chili and kidney. Stewed tomatoes and dices hot pepper tomatoes. If I have it I add a small can 12oZ maybe of the spicy v8 juice because the liquid simmers out a lot and then chili seasoning and a whole onion and peppers and mushrooms if I have them. Making a garlic cheese biscuit and cornbread to go with. Sometimes I make rice too so I can stretch it into work lunches and the dinners when the kids are at their dads house. Throw some shredded cheddar and maybe a dollup of sour cream in top.  Good stuff. To me chili has always rocked with just the basics.

Why not just open the fridge door and toss in whatever comes to hand?  Let's see:  Leftover beef gravy, an egg, lunchmeat, mayo, celery, cranberry juice.  Be sure to add quinoa and brussel sprouts!

Actually, we occasionally leave out the beans and enjoy it, but we call it spaghetti sauce.

Which reminds me.

I dearly love Skyline Chili - have eaten countless times at their original location in Clifton - but it also isn't chili.

If they have lunch in heaven, it'll be a Skyline four-way with a cheese coney.

Here in red state hell, Publix and Kroger carry frozen Skyline, but it's a pale imitation of the real thing in a Skyine restaurant.

Since Skyline isn't really normal chili, with the cinnamon, maybe chocolate, and whatever other non-chili spices it includes, but DUmmies would hate it because there are no obscure foreign words on the menu.

We were in Cincinnati for a couple of Reds games recently, and the visits to Skyline were even better than the baseball.

It was good my friend. My daughter actually requested it since we haven't had it since before spring and i figured wth since i always overstock on the canned components and seasoning so i knew we could so it.  Glad she did:) like I said: keep it simple and add a couple of complimenting dipping sides like biscuits or cornbread:)

I agree with keeping it simple. I never follow recipes and often mix it up a little but I never travel the world to find exotic ingredients either.

Only DUmmies would make chili such a complicated mess.
