I have about 20# sweet potatoes that I purchased in a big box

I am fearful that they are going to go bad and I need to do something with them.

Any suggestions?

1. Sweet Potato Pie

Cook up a few pies for the family, your church group or bring one to work. Similar to pumpkin pie (I like it better.)

2. They freeze well if partially cooked.

You can either just blanch and freeze as-is, or process further into products such as sweet potato fries, mashed, etc. and then freeze.

3. I would boil or baked, mash and freeze in one meal portions.

You can then serve as is or use for casseroles or make pies/breads.

But it does take a long time for them to go bad, so you might want to just keep using them up and not bother with all that.

4. 1st idea - Get 'em out of the box, separate out into well aired mesh bags or such, keep cool and dry

Rot is the culprit. Cull or trim and cook any that are off. The other ideas above are good ones, as well.

Why would anyone buy more food than they and their family can eat or save ?

I went to the Farmers Market in Downtown Dallas yesterday.  I didn't buy anything because whatever I would have wanted came in a basket.  Too too much for my needs.

There were sweet potatoes there.  BIG sweet potatoes.  They looked like mutant pumpkins.  'Suckers were huge!

20 pounds of sweet potatoes would make a nice batch of sweet potato beer.

I want to hear more about her slutty daughter, and more about her move from her dusty, crappy Texas trailer park into the abandoned farmhouse.

A box of half-rotted sweet potatoes is boring as hell.
