I'm just curious, how many of your classmates that majored in either of those two have a job in that field?
My degree is information technology and I spent more years since then working in a different occupation than what I studied (banking, customer service).
The forestry guys? All of them, last I knew.
Horticulture? Not so sure, don't keep up with them so much, I know a third for sure. But to put it into perspective, the company helped pay for my horticulture degree because they were expanding, wanted a couple on staff, and couldn't find them.
Sadly, our culture has a reverence for education that is bordering on foolish. Put me up against a guy with fifty years in the business and no degree or certifications, and in this day and age I will win that bid a majority of the time based simply on a few pieces of paper. Is it right? No. But that's why I have the degrees. Heck, can't even do some state contracts without them.
