A long time ago there was a small creek where we used to catch tons of them in the 4-6" range.  We just threw them in boiling water to cook them, nothing special.

We have a Chinese buffet here that has crawdaddys, problem is I have no idea how to eat them.  Are they eaten like a lobster or peeled like  shrimp???

I never thought I'd actually tell vesta this, but there's always the first time for everything:
