But, say a fish eats vegetables or a chicken eats vegetables and then I eat the fish or chicken, or, to simplify, the chicken of the sea, doesn't that automatically make me a vegetarian?

Diners can buy a reservation at the restaurant by purchasing a $150 gift card that gives them entry. The menu, which is still evolving, includes one entree so far: macadamia crusted wild caught cod or organic tempeh served with grilled asparagus and an organic basmati rice pilaf with vegan lemon-tarragon butter.

Starters include charbroiled artichoke hearts with vegan basil aioli and the restaurant's widely known sauteed Brussels sprouts.

The dinner will have two seatings, at 6 p.m. and 8 p.m. and a cash bar will serve cocktails for $2 each. Mark Nelson will play live music.

McFoster's has been in business in Omaha for 18 years, and Foster has owned it for ten of those years. The restaurant's menu is primarily vegetarian, but it also serves free-range chicken and fresh seafood. Everything on its menu is free of refined flour and sugars, and it uses organic produce from local gardeners.

Foster said the restaurant will stay in business until Feb. 29, when it will close if the owners don't find a buyer or raise enough money to cover the back taxes.

Tilapia.. Ugh. Maybe its from living where I do, but when I see the word 'tilapia' I feel it needs to be followed closely by the words 'bait' or 'chum' - Tiplapia is a nasty cichlid -similar to the same sort of cichlids people like to put in their home aquariums, such as Jack Dempseys & Oscars - and just as ill tempered.

Oh, and the tilapia you probably bought at the supermarket ? To insure that they grow large & don't rip each other apart over potential mates, they fill the water they farm them in with hormones that make them all male. Yum-yum.

I've lived my entire life up & down the Central time zone.  The "pricier" joints in the Midwest have fresh seafood flown in daily.  Otherwise, it is not exactly recommended to expect much when ordering seafood.
