Ah baking

started by baking mostly artisan bread for hubby. It is actually cheaper than buying it and much healthier.

Now I have graduated to whole grains.

I had to add gluten flour to the mix and hubby actually likes it... a winner on both, since I need to add some fiber to his diet.

But yes, you too can bake. I will experiment with the recipe, it is still a modified artisan white bread. So I need to see if adding a little sugar will help... remember, I cannot taste any of this... lovely gluten allergy.

1. Ah, I'm sorry you can't taste the efforts of your work. :(

We have some pretty great bread bakers in the group, and we went mad baking no knead breads a while back.

2. I've had a few experiments in baking gluten free but none has achieved the texture or flavor I crave. Either they've been cardboard with texture or well flavored sawdust.

Frozen Glutino English muffins have been filling the bill for breakfasts in the meantime, the only meal when I ever ate much bready stuff.

If my attempts ever produce something that perfumes the house, tastes like bread, and has decent texture, I'll post the recipe.

You know, the defrocked warped primitive has a most peculiar condition.

It's very odd; she's allergic to things good for her, and not allergic to things bad for her.

It's funny how that works out.

Gluten free will be an experiment one of these days. Those better mostly be flat.

4. Gluten

I'm sure you've explored a lot and tried all kinds of things to deal with your gluten allergy. I'm wondering if you ever experimented with naturally-yeasted (sourdough) breads.

There's some evidence that what many consider to a gluten allergy is actually a yeast allergy, and folks with that can actually eat breads that are naturally-leaved and don't contain any baker's yeast.

'Course if your allergy flairs up when you try to eat any flour product - cookies, cake, wheat cereal, etc, that would pretty much throw that theory out the window for you.

Anyway, I wanted to throw that out as a possibility because a lot of people aren't aware that in some cases, it's the yeast and not necessarily the wheat.

6. No, mine is pretty constant

If I am not careful about cleaning the counter after making the bread, and ANY gets into me... or just the flour... I am in trouble.

Hell Matzah, as yeast free as you can come... i'll save you the graphic description.

I think soon I will get some corn meal and a few other things and see if I can experiment to make a few flat breads.

Glutino Bagels though are pretty decent. I am looking forwards to one with cream cheese and smoked salmon for dinner actually.

7. I love baking

I don't have a problem with gluten but I am diabetic. I can eat bread I bake but alas, no cookies, sticky buns or a lot of other stuff.

I can bake various types of bread , cake and make doughs and pastries.

I choose to buy them from the store because my time is worth money to me - and the extra time spent preparing such things makes them significantly more expensive than the store bought stuff with little improvement on taste and nutritional value.

She can bring home the bacon and fry it up in the pan with everything else she has resting on those plump shoulders.

Cheaper?  No, hell, no it's not cheaper to make bread at home.  As someone else above pointed out; our time is worth something. The time spent on baking bread could be used more wisely elsewhere.

We all need a hobby and I guess she found hers. Tho I would rather get my fiber from fruits and vegetables instead of rough bread.
