I used to make it a lot when the kids were young. Fairly inexpensive and a good leftover.
Mine is ground beef, chopped onion, celery, and garlic, sliced canned mushrooms all cooked together until the meat's browned. (I will drain most of the grease out, but not necessary) Add 3/4's of a large can of V8 juice, black pepper, can of petite diced tomatoes. Get it to almost a boil, add half of a bag (or more if wanted) of "skinny" egg noodles. When the noodles are done, add a can of drained corn (I prefer Green Giant niblets). May need to add more V8 depending on how much of the liquid the noodles soaked up. I don't add salt until the end, because the V8 juice is salty. Personally, I think it's better the next day.
