Spinach salad

Frank's thread on the DUmmies spinach thread reminded me of a salad I like to make.

1 bag washed spinach.
1C walnut halves (shelled, of course!)
Crumbled goat cheese
Dried currents
Apple slices (1-2 apples, your choice)
Lite House Walnut Raspberry salad dressing. (available at Safeway)

First core the apples and slice into thin sections. Then soak them in lemon juice(wont brown).

While the apples soak, heat a pan on med for the walnuts. Put the walnuts in the pan with a small ammount of oil/butter and S & P. Fry until they begin to crisp. Turn down the heat and add a TBL of light brown sugar. Toss the walnuts until the sugar melts, but dosen't burn, and coats the nuts. Take off the heat and let cool.

Assemble the salad with the spinach, apple slices, walnuts, and currents. Drizzle the dressing on and add the cheese.

It's one of our favs.

Take your basic recipe only switch out the walnuts for pecans, and either switch or keep the apple for strawberries.

Have you ever tried Briana's Blush Vinegrette? Simply wonderful! :drool:

It's usually on the top shelf where I have trouble reaching it... :(. Most of the groceries around here have it, even WalMart.

I've had a spinach salad with strawberries & walnuts and then some sort of dressing. It was pretty good.

I've always been partial to a warm spinach salad.

1 bag spinach, washed
4-6 oz sliced mushrooms
3 hard-boiled eggs, sliced
4 oz can mandarin orange segments, drained
6 slices THICK bacon, chopped and cooked, fat drained

Dressing:

1/2 c. salad oil
1/4 c. ketchup
1/4 c. vinegar  (I prefer red wine vinegar)
1 tbsp. Worcestershire sauce
3 tbsp. sugar
1/2 c. grated onion

Combine in saucepan or skillet, heat to simmer.  Pour over salad and serve immediately.
