Writing about food: Laurie Colwin does not care for pumpkins

"I don't mind admitting that I have never liked pumpkin. I hate pumpkin pie and am lukewarm about pumpkin soup. I once had an unhappy encounter with a stew served in a pumpkin. It did not further endear pumpkin to me. I have bought cheese pumpkins as well as 'pie' and 'sweetie pie' pumpkins. These are pale orange, dense fleshed, not a bit stringy, and not to be used for jack-o'-lanterns. I have steamed them and baked them and fried them. I have dotted them with butter and brown sugar and scattered them with garlic and cheese, and I still say it's pumpkin and to hell with it.

"Children, however, seem to require something pumpkinlike on the table at Halloween even if they don't eat it. For them I recommend butternut or acorn squash split, seeded, and baked with butter and brown sugar. The seeds, of course, go into a colander with the seeds from the jack-o'-lantern to be endlessly washed and separated from any pumpkin or squash sludge, then drained, salted, and roasted. When you serve these before or after dinner, even adults will tell you how delicious they are."

1. Also not a pumpkin fan myself, but
 
my younger son, who enjoys cooking, really likes pumpkin pie and the whole process of roasting the pumpkin, pureeing it, and making the pie. At home he could always use my food processor, but he found that in his college apartment, a fork and some effort were all he needed (though I had given him some pointers to make the process easier). I'm not sure what a college guy and his roommate will do with FOUR pumpkin pies. Probably treat everybody in their apartment complex  Oh, and he always has to roast the seeds, too. I like the roasted seeds too, with just olive oil and salt, but the outer shell gets to be a bit too much after awhile.

how not far your son's pies might get. I love that he makes his own. Mine isn't there yet.

Now I'm wondering if the reason I never liked pumpkin pie is because I've only tasted ones made with canned pumpkin. Hmmmm.

Just about my favorite pie - provided it is well cooked. Lots of lousy pumpkin pies are baked; running filling, under baked, not enough flavor and worst of all is when the crust is not cooked on the bottom.

I read in a book on American food history that early American cooks would scoop out a pumpkin and pour in a filling similar to ours. The whole pumpkin would be set in the hearth and turned as it sat close to the fire to help the filling cook.

When we lived in Germany years ago, my German landlady, who was a wonderful cook, loved pumpkin pie, there is not a German dish like it.

4. I nor my people care for pumpkin anything, except for decoration! I do like other winter squashes.

6. I didn't like squash until a few years ago.

I don't care for it either, never have.  It's the consistency of what I pick up after my pets do their business.  And the whole pumpkin spice thing is way out of control.  I adore pumpkins for decoration, though.  I also have a cat named Pumpkin, I love him.  OK I'm done.

But, at the Thanksgiving feast, the real dessert worth having is a chocolate icebox cake that has 48 ounces of baking chocolate in it.  You eat that, and . . . It's nap time!

My aunt makes the icebox cake most years.  This year, we've got a 'special' coffee mug for her.  Semi-long, funny story.

One thing that's always gotten me in past years--this is far from the first time the primitives have discussed pumpkin pie--is the way the primitives whined and complained if the top of the pie "cracked."

Whoop-de-doo.  It cracked.  As if that affected the quality or the taste. 

<<<likes pumpkin pie in any way shape or form, but best is from canned pumpkin, and served with sour cream heaped on top.
