Horse with no Name (29,373 posts)I have about 20# sweet potatoes that I purchased in a big boxI am fearful that they are going to go bad and I need to do something with them.Any suggestions?
Graybeard (5,835 posts)1. Sweet Potato PieCook up a few pies for the family, your church group or bring one to work. Similar to pumpkin pie (I like it better.)
Denninmi (3,103 posts)2. They freeze well if partially cooked.You can either just blanch and freeze as-is, or process further into products such as sweet potato fries, mashed, etc. and then freeze.
cbayer (110,004 posts)3. I would boil or baked, mash and freeze in one meal portions.You can then serve as is or use for casseroles or make pies/breads.But it does take a long time for them to go bad, so you might want to just keep using them up and not bother with all that.
pinto (94,297 posts)4. 1st idea - Get 'em out of the box, separate out into well aired mesh bags or such, keep cool and dryRot is the culprit. Cull or trim and cook any that are off. The other ideas above are good ones, as well.
