Oh my.

I've been busy, really busy, but I didn't want the cooking and baking primitives to think franksolich isn't watching their seditious, racist, and hate-filled activities, because I am.

OMG I had the best Rib-Eye steak

It was tender, 1.5 inches thick, and was cooked enough so that I was aware that the breath was knocked out of it, and my fork and knife could do the rest.

but I live in the Southern United States, and you pretty much have to elaborate like I just did to get it done correctly. Unless you are in St. Pete, FL and go to Bern's Steakhouse.

It has such a great taste!

I like mine a tiny bit more cooked than you do.........medium rare for me, TYVM!

Tender beef is becoming a rarity today. The more corn that is burned in fuel tanks, the more cattle are field grazed on grass.

Grass = TOUGH!
Corn = TENDER!

You got that right.  The cheaper cuts are difficult to cook out to less than the consistency of shoe leather.

I find it can be done, but it requires extra steps. Season the beef however you normally would, and stick it in the oven at about 250 until it is slightly cooked on the outside, but still pretty much raw in the middle, then finish on the grill. The time in the oven seems to soften the cheap cut up enough to grill properly.

Beef fed on a diet of corn and beer is to die for.   Well aged and fire seared with a medium rare center, even the fat turned to cracklings is outrageously tasty.

Last week, I bought five 6 oz rib eyes from Wal Mart for $9. They were individually vacuum packed and in one large bag. The meat was beautiful. They were frozen, so, I thawed them overnight in the fridge, when I went to throw them on the grill they were extremely tender. 12 minutes later, they were delicious.
