Potato salad recipe (everyone's got one). This came out good -
Red and white potatoes, coarse chopped.
Red and sweet onions, coarse chopped. (Half the bulk of the potatoes)
2 - 3 slices Bacon.
Celery, coarse sliced, and Radish, coarse sliced. (Bulk equal to the onions).
Dressing -
Mayo.
Ground horseradish.
Black pepper.
Dill.
Topping -
Chives.
Basil.
Celery leaves.

Boil potatoes till just tender. Drain and chill.
Sautee onions and bacon till done, almost browned. Drain and chill.
Toss all with the celery and radish.
Blend mayo with spices to taste. Add others to taste - I like some garlic or paprika here.
Toss with the mayo dressing, set out with the green toppings.
Best at room temp, but as always - Refrigerate left-overs. ~ pinto
That would be okay, minus the onions and horseradish.

When people ask me for my recipe they want to know how much of everything to put in. I don't know. I do it by sight and taste.

Mine uses all red potatoes, scallion chopped celery and chopped red onion, minced parsley, and a dressing of half and half sour cream and mayo.
The secret is to cut the potatoes and sprinkle them with cider vinegar while they're hot, then cool them down before adding the other stuff. Hot potatoes absorb every single drop of the vinegar.
People tend to groan, roll their eyes and tell me it tastes like summer.

I usually blend in sour cream, just didn't have it on hand today. Glad you mentioned it. I really like potato salad to have some tang to it.

Two things I really don't like regarding potato salad: commercial/store bought or sweet pickles.
And while I prefer my own (based on my grandmother's New England recipe), I'm open to try others except for store bought or with sweet pickles.
I never heard of sauteed onions in potato salad!
And do you mean ground horseradish, or grated?

6. Ground horseradish. Grated would probably work as well, if not better.
Sauteed onion is a new one for me too. I've become a fan of caramelizing them for salads and sandwiches. Get them to just about burnt, drain and add to a simple salad, tuna sandwich, a burger is a natural and the off-the-wall combo - PB&O.
Sauteed red onion in peanut oil, browned and drained. Use a heaping to make a PB&O on rye. Peanut butter, onion and rye bread. It's really good.

7. My kids won't eat any other potato salad but mine.
Red potatoes boiled with skins on. Skins removed while potatoes are warm then bite-size cubed. Fine chopped onion and celery and medium chopped hard-boiled eggs added and tossed to evenly distribute. A 1 to 2 ratio of sour cream to mayo mix poured over and tossed until well coated. Add a generous sprinkle of paprika over the top of the mix. It's time consuming but well worth the effort. I'm now hungry for some potato salad.

8. Hold the Mayo, I use hummus & yogurt.
As a great substitute for mayo I've been using Hummus made smoother with tablespoons of plain Yogurt in dishes just like this. For even more zest try the flavored hummus like Roasted Red Pepper or Basil & Tomato.
Hmmm.
franksolich walked by a lumberyard the other day, where they already had the spring gardening stuff stacked outdoors.
On one pallet, there were 10-pound plastic bags of some fertilizer called "hummus."

My MIL had a hard time cutting potatoes after her stroke, she decided to try the canned potatoes and I was shocked at how good it actually tasted.

Anyone who would eat onions would eat shit! Just kiddin'! "Toots" luvs the damn things! I don't know what it is, but they taste absolutely bitter to me! I use dried onions, but fresh or raw, turns my stomach!

Vidalia onions come from Vidalia Georgia. The soil they grow in gives them a very mild and sweet taste. Some will eat them like an apple or some other fruit. There are Vidalia onions that are not from Vidalia, but they aren't as good.

This is one I got from one of Emeril's cookbooks. It. ROCKS.
2 lb small red potatoes, quartered
3/4 t salt
1/4 t cayenne pepper
1/4 t ground black pepper
2 T lemon juice
1/3 c chopped celery
2 T green onion, finely chopped
1 T fresh parsley, chopped
4 hard-boiled eggs, coarsely chopped
3/4 c mayonnaise
1 1/2 T whole grain mustard (or Dijon)
4 strips bacon, cooked crisp & crumbled
Place the potatoes in a saucepan & cover with water. Bring to a boil. Cook until fork tender about 10 - 12 minutes. Drain & put in a bowl. While still warm season the potatoes with salt, cayenne, pepper and lemon juice. Toss well. Add the celery, onion, parsley & eggs.
Mix the mayonnaise & mustard together. Stir into the salad. Add the bacon & toss gently.
Serve right away or refrigerate & serve cold.

Potato & egg salad is also quite good, when made right. Though I like the yolks blended & seasoned first, as if one is making deviled eggs, then add that to the rest of the mix.

I did this with about 6 slices of peppered bacon, the thick slices. Oh. My. GOD.
But yeah, the "blending" of the yolks sounds like a nice idea. Separate them, throw a little paprika on them, mash them up, and blend them in with the mayonnaise and mustard. I'll have to try that.

I will agree with Grasswire on one thing, if you can believe it. I detest commercial potato and pasta salads. They make it real cheap by using copious amounts of pickle liquid.

Maui onions are pretty good when you can get them too.

She always finds a way to confound me instead of a recipe, it's kind of a narrative.
I start with red potatoes and i leave the skin on. You cook them until they are soft enough to eat but not mushy.
Once they are cooked, I cut into bite sized pieces. I cook a LOT of bacon and break it into pieces, adding it to the potatoes. I chop some fresh parsley and some green onion (whatever amount appeals to the folks eating the salad) and add it to the potatoes and bacon. I add enough crab to taste it because I love crab but am also kinda frugal (crab is expensive). I have used canned and fresh crab and both are fine.
The dressing is simply low fat mayo with some brown mustard, salt and peper. I only add enough mustard to make it flavorful and I only make enough dressing overall to moisten and cover the potatoes for flavor. Too much dressing will make the salad goopy and will bury the crab and bacon flavors (which would bum me out).

We have managed to remain good friends, we even vacationed together in Cabo San Lucas a few years ago. Our kids were young when we divorced and we didn't want to screw their lives up by acting like tools.

Good on you. My parents did the same thing, except for the trip to Cabo, and I am grateful for it.
