Here, we're having a prime rib roast (bone in) and some assorted goodies. I intend on making some fudge beforehand and then probably a Pecan Pie.

No idea, but if it stays true to form we'll have ham, turkey, gravy, mashed potatoes, green bean casserole, and various tasty dessert items.

Dunno yet. But we have some filet in the freezer and at least 3 bulbs of garlic. I can start with that.....

For the appetizer we're doing stromboli, for dinner we're doing salad and rolls, spiral ham, baked potatoes, and my MIL is bring a brussels sprout dish she makes, for dessert we're doing apple and pumpkin pie, my cousin is bringing cheesecake from Brooklyn and his wife is making kielbasa.

It's the effort part that they don't care for. I made homemade cranberry chutney last year, and brought it on bf's request. He doesn't like the canned jelly. They didn't like the homemade, it didn't even make it to the table. But there was that jiggly canned jelly.

Their loss. I love to spend time in the kitchen making food. Growing up, that's where the family gathered when big meals were being made. And I've yet to meet too many ladies who can mtch my cooking skills. Must be looking in the wrong places. :-)

See, that is what sucks. I learned how to cook, and I cook well. I am used to a certain amount of work when it comes to cooking. It ain't right to fast food the holidays.

My wife tells me they sell molds. You put your homemade cranberry sauce into it, chill overnight, and it makes a shape just like the can - ridges and all! :-)

I've been baking/candy making all day.
My daughter was over last week and we did peppermint bark, peanut butter cups, cookies and creme truffles, chocolate coated almond toffee. Saturday I made magic bars. Today I did 3 batches of party mix, chocolate dipped pretzel rods w Christmas sprinkles, oatmeal-mini choc chip-cherry cookies. Still doing mini brownie cupcakes w caramel Hershey kisses in them and turtles tonight. I packed up 8 gift bags for her for the munchkins
teachers and babysitter. Once I finish the stuff tonight, I will have my office people done and the 3 priests at church.
We are having 18 in for a sit-down dinner on Christmas Eve.
Shrimp w cocktail sauce
Platter of summer sausage, cheese, olives, marinated artichokes
Whole beef tenderloin w horseradish sauce
Spiral ham w my Jack n Coke glaze
Twice baked potatoes
New Orleans Corn Pudding
Sauteed mushrooms and garlic
Romaine w mandarin oranges, dried cranberries, crumbled feta, red onion - strawberry vinegrette dressing
Sister Schubert rolls
Creme brulee
Pecan tarts
Mincemeat w B&B tarts
Cinnamon whipped cream

OK, we have located the overachiever in this thread! LOL. Seriously, it sounds divine (no pun intended). Hey, my Christmas dinner will have Sister Shubert's rolls also. Heh. Can I get the recipe for your Jack and Coke ham glaze? My daughter is actually making a ham, but I can pass it on to her. We're headed to her tiny (450Square Foot) apartment, but I have to bring rolls, yam casserole, homemade cranberry sauce with orange liqueur and cornbread dressing. She's contributing pies and the ham, and the ubiquitous green bean casserole.
I DID bake cappuchino brownies and pumpkin bread yesterday and gave most of it away to the vet's office and my mail lady.
You leave me and my efforts in the dust. And I'm STILL gonna take a nap on Christmas afternoon. Heh.

Jack and Coke glaze....Bou - I don't measure, so you will kind of have to wing it.
In a saucepan....
1 regular size pop can of Coke
the glaze packet attached to the spiral ham ( I get mine at Sam's - got a 9+lb bone in today for $21.00)
about 3/4c. light brown sugar
couple of squirts of spicy mustard (I use Gulden's)
about 1/4c maple syrup (the real thing, not the Aunt Jemima, Log Cabin, Mrs Butterworths)
about 1/4c Jack Daniels
dash of ground clove
bring to a boil, making sure not to burn it! but you want the sugar crystals all dissolved.
I put the ham in one of those baking bags. I have one of those roasting ovens that will hold a whole turkey..I put the bagged ham in it, then pour the glaze over the whole thing, tie the bag, tight.
I bake it on 325 for about 40 minutes, then cut the heat back to 225, for about 3-4 hours. I leave it in the bag to sit overnight in the refridgerator. The ham just absorbs the juices into the slices. I take it out of fridge, leaving in the bag, about an hour or so before serving to get to room temperature.
This will not have the crusty glaze on it like a Honey Baked Ham, but it's pretty damn good!!

Euph, I've been doing most of this dinner for so many years, it's quite easy. I use to do 3 tenderloins and stuff one with 'shrooms, chopped green onion, and crumbled blue cheese. :drool: But I never had any leftovers ... :drool:

I didn't try the brownie cupcakes, but M said they were awesome! They were ridiculously easy to make. Awesome and easy is always a good thing!
Made the turtles this morning. They were technically really easy, but such a pain in the tush!! There has to be an easier way to keep caramel more fluid then setting it over a pot of hot water. :banghead: A glob of melted milk chocolate (Ghriadelli milk choc chips), 3 pecan halves on top, glob of melted caramel ( Kraft caramels and a bit of whipping cream) cover with more melted milk chocolate. Oh. My. God. They are some seriously scrumptious little delights!!

I used to make rolls from scratch on Christmas and Thanksgiving until I discovered Sister Schubert!! She has a new kind (to me) that are separately frozen and about 2 inch square. They bake in 5 minutes...and when I take them out, I brush them with melted butter. As my son says: "they are magical!"...

Thanks for the recipe, deb, I'm going to try it out. Sounds delish, and I'm used to winging it on measurements; in fact most of the best dishes I turn out have either been modified from the original recipe by me, or never had a recipe to begin with. I like to think of it as being in tune with my colonial ancestresses cooking over their open firepit in a big black kettle.. :-)
Thank God for modern kitchens. Ya gotta hand it to the women way back when feeding crowds of people with no real recipes (have you ever seen one of those old timey ones :p), no modern conveniences, and having to get up the next morning and do it all over again.

Kids ar going to their dad's at noon that day(after they open their 'Santa gifts') until noon the next day, so 'dinner' on Christmas day will be nothing but the mornings breakfast casserole.
We are having our Christmas dinner on Boxing Day(the next night). I'm kind of looking forward to, after all the rush and them bouncing off of the walls, having a quiet day to myself actually!
So Boxing Day we are having ham, homemade au grautin potatoes, scotch eggs, deviled eggs, sausage rolls, various veggies, cranberry orange bread and pumpkin pie!

I picked up a few extra steaks to go with the rib roast. Not sure what else is happening this weekend... I suppose I should call my brother at some point since he's the only relative in the area.

It takes about an hour, but it's worth it. I have nothing against using something from a box. I like Goya's spanish yellow rice (Arroz Amarillo).

Eh. I cook everything separately. While the the meat is cooking, I begin the rice. Once the rice is nearly done everything gets dumped into the same pot and covered, juices and all. I'll drop in some frozen vegetables and it's usually finished ten minutes later. My basic paella recipe is chicken, chorizo, beef, and shrimp, rice, diced onions and frozen peas.

We're having a small spiral cut ham, mac & cheese, and potatoes. The weather caused a change of plans, so no get together at my sisters, just me and the wife at home. Much quieter, anyway. :)

All my life, I've never seen it anywhere but among my family.
I'm guessing it's a Pennsylvania thing, as the parents and older brothers and sisters were from there.
It's definitely not anything one might find in Nebraska.

My mom used to cook me one for my birthday. Make sure you get a duckling (young one) opposed to a mature one. I cooked that puppy for 8 hours to get it tender enough to pull the meat off the bone.

Dinner turned out great last night, but we never made it to Midnight Mass. :( Last guests left about 1 and the time T and I finished up the kitchen and putting the last stuff away, I got to bed about 2....totally exhausted.
Got up this morning, made Danish pastry and we went over to my daughter's to have brunch with them and open presents from each other. Came home about 2 and have been on the couch since. :yawn:

My ham turned out fantabulous...M said the beef tenderloin was terrific...but he liked the ham even better!
I left it in the roaster on 150 all day. It was just enough to keep the glaze and juices warm, and I kept going out and swishing the bag around and getting the liquid up into the slices. It was definitely a :drool:

Kept it simple since it's just me and the critters this weekend.
Last night was dry-aged ribeye, loaded baked potato, and salad.
Today I kept it pretty simple--bacon and eggs for breakfast, snacks of frozen appetizers, shrimp, and bread-and-butter pickles, a bottle of Rogue Chocolate Stout, and for dinner, turkey breast (on the bone), stuffing, mashed taters, peas, salad, and rolls. Cookies for dessert.
Still got a ton of leftovers. Turkey sandwich, anyone? I'm heading down to the gas station to fill up. Blizzard watch here, and might turn into a blizzard warning before long.

ours was Christmas lunch since I was working tonight. Ham, scalloped potatoes, green bean casserole, pecan pie, pumkin pie and candy that Santa left.

We're so full, we ate so much, and I can't believe how much ham we have left over and that's after sending people home with a lot of it. Looks like we'll be having ham sandwiches and ham dinners for a few nights.

Daughter's family is supposed to come to dinner Monday night to eat leftovers! I sure hope so, I've got a lottttttttt of desserts left. :-)

This thread's gone all over the place, covering just about everything and anything.
Anyway.
For some peculiar reason, when I was growing up, a usual Christmas dinner included pineapple chunks dipped in creme de menthe.
All my life, I've never seen it anywhere but among my family.
I'm guessing it's a Pennsylvania thing, as the parents and older brothers and sisters were from there.
It's definitely not anything one might find in Nebraska.
Frank....my mother used to take pineapple ice cream topping and add creme de menthe to it, and serve it over ice cream when she had bridge group dinner.
I always hoped for leftovers so that I would get a bit too. That stuff was wonderful!! I had forgotten about it, until I read this. Thanks for the memory. :blowkiss:

Yep, we do too, we have a 1/4 cheesecake, and 1/2 of an apple and pumpkin pie leftover.

I usually make at least one NY cheesecake and maybe a Grasshopper cheesecake.
Yesterday morning, I made the whole NY cheesecake batter, but instead of putting it in a springform...I made cupcakes!
Out of the one recipe...
36 regular size cupcakes. Did a pecan cinnamon crust, the cheesecake filling. Baked for 15 minutes at 350, took out, put on the sour cream topping and back in the oven for another 5. Did a raspberry chambord sauce that I put in a squirt bottle on the table.
48 mini size cupcakes. Oreo cookie crumb crust, cheesecake filling with mini semisweet chocolate chips, baked 12 minutes at 350. Made a topping of sour cream and melted Baker's German chocolate.
24 mini's. Oreo cookie crumb crust, cheesecake filling with green creme de menthe, white creme de cocoa, baked at 12 minutes at 350. Made topping with sour cream, melted white chocolate chips and melted Andes mint chips. Had to add more white chocolate chips though, because using half of each was just toooooo minty and overpowered the white chocolate.
Those little ones just were disappearing!!!
I have a bunch of creme brulees and mincemeat tarts, and some pecan tarts, too. Most of the candy and cookies went as gifts to others.

I made a small standing rib roast and we had shrimp & loaded baked potatoes. I made a honey pecan pie that wasn't too bad (diabetic friendly). Still have half of the standing rib roast left. Just had pie and coffee.

For me Christmas is a two-day affair: Christmas Eve and Christmas Day. On Christmas Eve I kept it pretty traditional and made seafood stew with scallops and shrimp, simmered in a lovely broth of tomatoes, red wine, chicken broth, and the juice of an orange. I’ve got to admit, the idea of putting orange juice in a seafood stew gave me pause, but the results were delicious. The juice added a subtle sweetness and perfume that really jazzed up the broth. I’m thrilled with the way it came out.
The Christmas Day dinner was a little different. I used a recipe I found in a James Beard cookbook: Turkey Cutlets "Papagallo." The cutlets were lightly floured and quickly browned in a pan. Then I topped each cutlet with a thin slice of ham, some sauteed mushrooms, and a sprinkling of Parmesan cheese. Then I added a bit of chicken broth and covered the pan, letting it simmer for about 5 minutes. The results were very tasty indeed. The cheese melted into the ham and mushrooms, and the turkey was nice and tender. On the side I had some "smashed" potatoes and wilted Swiss chard with a little olive oil and garlic. Both nights I ended the meal with a piece of Italian grain pie. It was a very satisfying Christmas, meal-wise. I'm going to make that turkey recipe again, and I plan on checking out more James Beard recipes as well. :-)
