Oh my.

You know, I'm starting to wonder if perhaps Granny from Arkansas should take over the cooking and baking forum; it's true that dear sweet old Lu has improved--some--the past few months, but perhaps the forum needs some new blood, some new leadership.

Looking for a good oatmeal pancake?

I got a hankering for pancakes this morning and discovered that I didn't have any oatmeal. However, I did have some granola. I threw a handful of granola in with the wet ingredients and let it set while I got everything else ready and heated the griddle. Then I just mixed everything together and cooked as usual.
 
Wow! I guess that because the oats were toasted in the granola baking process, it made the flavor more intense and kept the cakes from being heavy or soggy.
 
The granola I have doesn't have large "nuggets". If it did, I would break it up a bit first.

1. I've never put oatmeal in pancakes. Here's my favorite recipe

It's excellent.

INGREDIENTS:
3 cups all-purpose flour
3 tablespoons white sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted

DIRECTIONS:
1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
 2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it's ready!
 3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it's just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.

2. That recipe would make quite a stack.

I have made oatmeal pancakes before, but I used regular oatmeal. They were ok, but the oats always had that uncooked taste. The ones I made this morning had a toasty, nutty flavor.

3. Oh I always cut it down

to the proportions for one egg. All recipes even has a function where you can convert to smaller serving sizes.
 
I've made buckweat pancakes, never oatmeal. Perhaps I'll try it sometime.

<<<had pancakes this morning at the bar in town; I dunno what kind, though.  To me, pancakes are pancakes are pancakes.  But rather than pouring hot syrup on them, I dump heaps of sour cream on top.
