Today I had some chocolate chip instant oatmeal that I got at Costco under their house brand.As I was eating it and biting into the chocolate chips it occurred to me. These chocolate chips had soaked in boiling water. They had lost no integrity.Kinda scary, no?

I imagine the oatmeal mfg did a lot of testing to formulate them so that they'd hold up during their recommended prep time. If do an experiment of melting both some regular chopped eating or baking chocolate and some chocolate chips, you'll find that the chips take longer to melt. Partly that's due to their density and partly to the amount of lecithin (and possibly other ingredients). I can't find an ingredients list for the item so I can't tell you what helps the chips hold their shape.

Not a lot...just a small pile. I grabbed about a teaspoon of sunflower butter and mixed it all together.Pretty yummy!
