Vesta--the reason your bison ends up tasting like ass is because you probably burn the living shit out of it.

Bison is so low in fat it's not meant to be cooked higher than medium rare.

I've had bison burgers cooked to that level that are as good as anything I've ever eaten.  Steaks too.

I like to buy local for that reason as well. However, I like to know the animals were treated well and as natural as possible before being slaughtered.
