Cold-weather comfort food

We have a whole inventory of meals that come out when the weather turns cold. Today, on this dampish cold day, I put a pork loin in the slow cooker with a big mess of kale. Yum.

Well, I certainly don't doubt that it's a big mess.

Putting something in the crock pot when you leave in the morning, then coming home to a wonderful aroma and fully cooked meal.

4. I need to work more on the basics of sauces.

Meat prices continue to rise, and I need to get more to thicker sauces to make up for smaller amounts of meat in the pot, not just thin liquids that don't 'stick'.

Awwwwwwhh, poor baby.   Just marinate the dwindling amount of meat you can afford with some hope n' change on it, and it'll be okay.

6. Two words: cornstarch and roux.

Right here is a pretty thorough discussion on different types of roux.

When using cornstarch, don't be afraid to use quite a lot, and dissolve it in a little bit of cool water before adding it to the sauce as the last step. Adding it dry to a hot liquid will cause it to clump irretrievably.

I have an answer, and it happens to be a three letter word: get a J-O-B-S, and you can afford to eat properly, instead of trying to get by with fillers.

I love making soups and stews, love how they can make the house smell good.

I really need to do more slow cooker meals.

I'm sure your house guests (when you can convince them to hold their nose long enough to come on over) appreciate the change of nose scenery as well.

The mrs. is a whiz with home-made soups, chili beans, stews, etc. 

Nothing like a steaming bowl of whatever homemade nectar and a grilled sandwich to counter any chill.

Along with a hearty fire in the woodstove...   :-)

And something distilled afterwards...   :naughty:
