primitive ruins pecan pies

Oh crud! I may have ruined my pies! :-/

I have 2 pecan chocolate chip pies in the oven. I decided to try making them deep dish this time, so I increased the recipe a bit. I bought a bag of pecans, and it was a half cup short of what I needed, but I knew I had a partial bag of pecans left in the cabinet.
 
After filling the pies and putting them in the oven, I grabbed the last lonely pecan that was stuck to the pot, covered in the sticky filling and popped it into my mouth. It was bitter!!! I checked the partial bag, and those were OLD pecans, and they are not good

I only added about 1/2 cup out of a total of 4 cups, and there is SOOOOOOO much sweetness in the pies. I wonder if it will be enough to mask the bitter pecans that are mixed in????

3. The verdict is in...

They finally cooled off enough to cut a slice. I cut the smallest slice I could, and I think I could tell when I got a bad pecan, but it wasn't real obvious, and I am not sure that someone who didn't know would notice. Other than that, it was delish!

5. Hint: Store all nuts in the fridge. They will keep much, much longer without getting bitter.

8. I usually just buy them right when I am going to use them and I put them in the cupboard since I knew I would use them soon, but I guess I had a partial bag in there that I had forgotten about that was old. I just didn't check before I used them! :-/

9. Pecans in the shell are covered with extremely bitter pith

That usually comes off when they are shelled. Occasionally, you will get a piece of bitter--not easy to forget.
 
It looks like there was one pecan with some bitter on it instead of all the pecans in the bag going bad.

Sorry I missed that, but I was distracted by looking around for the pie-and-jam primitive, the "grasswire" primitive, thinking for sure she'd show at a campfire featuring pies.

But alas, no Judy.

At any rate, I hope she's lurking in the DUmpster either later tonight or early tomorrow.
