but it has to do with "Covenants" or promised agreements between God and his followers. The laws of the old testament were the "old covenant." Jesus brought a "new covenant" between man and God....
The old testament isn't "null and void" in that it is the history that leads up to the birth of Christ, the prophecy of Christ, it helps to understand the context of Christ. But the Jewish laws of the old testament are not binding to Christians who are bound to the new covenant and not the old.

Leviticus (as were Deuteronomy and Numbers, also) was written largely by and for the Levites-- one of the twelve Judaic tribes. The Levites were the priestly caste (at the time, a concomitant of law-givers & judges too). Half of the Book of Leviticus are rules specifically targeting the priestly caste only (most of the diestary restrictions fall within this demographic). Another quarter of the laws are specific to the tribe of Judea en-toto (criminal and civil laws, mainly), and only the final quarter specific for mankind as a whole (very general laws-- almost admonitions if read as such).
So unless one is aware of the specific target of any particular law (priest, tribe, or humanity), it's not really that accurate to say "most/all Christians are hypocrites because of A; if law A is merely targeting the tribe of Levites...
Of course, many share this opinion...
