Poppycock!  What the heck does fruit have to do with it.  Chess pie is primarily eggs and sugar, it isn't fruit, and it sure as shot's not cake.

Well then, forget the sour cream.  

Make a special simple white sauce by melting and cooking equal amounts (about 2 tbsp.) of flour and butter, add 1 cup milk or cream, about a 1/2 tbsp. Dejon mustard, horseradish mustard, or prepared mustard and a 1/2 tsp. of nutmeg.  Let thicken over medium heat.  Pour over spinach and garnish with a small sprinkle of crushed red pepper flakes for a delightful sidedish.  :)

I went through a "stage" about 10 years ago, where I whipped up a cheesecake every other week or so.  My favorite ones to bake were ones with white chocolate.  Though, I did an awesome creme de menthe cheesecake for St. Patrick's Day once (got a tad "liberal" with the amount of creme de menthe), and I've done banana cheesecakes in the past.  I'll have to whip one up soon, as Mother's Day is coming . . . and I'd love to surprise my wife.

But, in the meantime, . . .  :beer:
