Dutch Oven cooking

How many here ever cook with a Dutch Oven? (if you even know what one is  :-) )

I love mine and use it often, either camping or at home over a BBQ.

Got some recipes?

You know, I grew up with dutch ovens, of both the cast-iron and the metal sort.

The biggest pots in the cupboard.

But for the life of me, I can't recall what was ever made in them.

Step 1.  Go to Wal Mart
Step 2.  Buy the biggest cast-iron pot-with-lid that Lodge makes
Step 3.  Stuff with meat, vegetables, and spices
Step 4.  Roast at 200 degrees for 8-10 hours

It doesn't get any better than that.

They're excellent for frying, browning, broiling, and roasting.  I use it for nearly everything.  Leave it on your stovetop and you'll use it every day.

I have half a dozen professional sautee pans (with about 200,000 miles on them, all beat to hell) I got from the last restaurant I worked in and I barely use them anymore.

Try this:

8-10 small red potatos quartered, unpeeled.
1 (1 lb or so) pkg your favorite Brats (Johnsonvilles work)
1 white onion halved and sliced
1 large jar of Sauerkraut (Steinfelds if you can find it)
1 bottle of dark beer
S&P to taste
Get your fire going for the oven. When you've got a nice bed of coals, heat up the oven.
Brown the brats, add the potatos and onion. Cover the whole thing with the Kraut, undrained. Season. Pour in the beer and put the cover on the oven. Let simmer for an hour maybe 1 1/2 hrs.
