Title: Dinnertime....whatcha having??

We made a shrimp scampi over angel hair pasta, with peas on the side.  I skipped the shrimp and just had the past with garlic butter.  The boys were in  heaven.

I don't feel like cooking today.  I brought back some boudain from my grandpa's house, I'll probably just eat that for dinner.

Okay, last night I didn't cook.  Tonight I did. :)

I'm having salmon filet, marinated in soy sauce, lotsa garlic, squeeze of half a big lemon, spoonful of sugar and some pepper.  Then cooked on the George Forman (I don't have a "real" grill).

And a package of Green Giants roasted potatoes and broccoli in cheese sauce.

Going to a friends house for dinner...mexican food, baby!  Mr Flame made salsa, and she's doing up everything else...chile relenos, homemade chips, etc etc etc....can't wait!

Trying another batch of paella.

half of a medium-sized onion, diced
3/4 lb sirloin steak, thinly sliced
1 lb pork loin, thinly sliced
1/2 cup white rice
1/2 link of chorizo sausage (1 link if you prefer spicy food)
1/2 lb garden/sweet peas

Sautee the onions and brown the meat in the same pan.  After the meat has been browned, add the water and rice and simmer until the rice is cooked.  Halfway through cooking the rice, add the peas to heat them.  Stir and serve.

My mom made it for New Years Day every year.  I hate it.  It stunk the kitchen up for days.  It didn't taste very good.  I was forced to eat it.  I'm satisfy my parents with a couple of chocked down bites, but I hate boiled cabbage to this day.

I'm dining in enjoyment.

I wanted to find something special to celebrate the discombobulation of the primitives, but didn't want to drive to town.

So I pulled down a package of Pillsbury Apple-Cinnamon Muffin Mix, and am making that.

The instructions say to put the mix into muffin papers, but no, one shouldn't make life more difficult than it has to be.  I just poured it into a Corningware pie-tin.

Lazy Alfredo Casserole
1 cup alfredo sauce
1/2 lb penne pasta (al dente, cooked for ten minutes)

1/3 cup Italian seasoned breadcrumbs with
1/4 teaspoon garlic powder and
1/4 teaspoon black pepper

1/2 cup fresh shredded parmesan cheese

I bought some generic Wal-Mart brand alfredo sauce because it was on sale.  Lots of garlic.  Yum.

It's an interesting show if you can get past the self-important "chefs" (wow, two years of school).  They're part of Cooks Illustrated magazine, which is nice.  You can get a year of issues in a single hardback book for around $30.  They show you how to NOT cook something.

I like DiGiorno's thin crust pizza.

My wife is out of town (no shock!).  My Little Angel has started school and living with her mother and her mother's boyfriend, who is the father of Little Angel's three month old baby sister (pay no attention to the fact Little Angel's mother and my son are still married). 

Little Angel's school is 50 miles from me.  I've been picking her up from school (yes, me driving -- lock up your children) and taking her to drill practice back here (my wife got her involved) and then driving her back to her mother (except tonight she's staying with me), so I have missed my "window" to eat (several days in a roll now).

We have to be on the field at 7:00 AM tomorrow morning (locally, thankfully).  I plan to wake up at 5:00 AM (I'll probably be awake anyway -- it's an "old person thing").  I will get Little Angel ready and then take her to her favorite place (Waffle House).  We will order the All-Star Special ($5.69).  I'll eat my two eggs over medium, hash browns (not hash whites), sausage patties, and wheat toast.  Little Angel will eat the completely inappropriate HUGE waffle that comes with it.  That will be my dinner -- twelve hours later.

I'm thawing out my last piece of salmon.  Now I only have a few pieces of halibut left.  Is there a more boring fish than halibut?  :(

Need to head to the store for more pasta and grocery stuff.  And beer.

Tonight for dinner is beef tacos (crunchy and soft), refried beans and homemade guacamole, with homemade tortilla chips (well, home fried tortilla chips...I use bought corn tortillas to make them!).


I'm hungry already!

I went to my niece's wedding last weekend...and we had a terrific appetizer that I made as a casserole the other night....so we may be having leftovers  :-)


If you like eggplant parmesean...it was similar to that.


I peeled and sliced 2 medium eggplants into 1/2" slices. (rounds not lengthwise). Dipped them in beaten eggs with some milk added then into garlic/herb breadcrumbs. Sauteed them in olive oil and put on paper towels to absorb out the oil.

In a large skillet, I sauteed in olive oil, sliced baby portabellos, slivered vidalia onions, kosher salt, a bit of garlic, coarse ground pepper, and about a tablespoon or so of dried sweet basil. Sauteed until the onions were clear.

I sprayed a 9x11 pyrex with garlic Pam.

I had a large jar of Tomato Basil spaghetti sauce...I like Bertolli the best. I put a thin layer of sauce in the bottom of the dish.

Put a layer of sauteed eggplant on the sauce (I cut some to fill in the gaps). On the eggplant, I put dabs of JK Kraft spreadable cheese...Romano, Asiago, Parmesean with garlic and herbs ( I had it on hand bought at Kroger's in the deli and had forgotten to pick up Boursin which was in the appetizer). Then I layerd the onion/mushroom mix over the eggplant and cheese. Then covered with the rest of the sauteed eggplant. Dabbed on some more of the 3 cheese spread and poured the rest of the sauce over the top. Covered all with shredded mozzarella.

Bake at 350 for 30 minutes...(I did it for 40 and it was a bit too long).

Served with Romaine lettuce and a raspberry vinegrette.

I would also recommend having some Italian bread too, as it's sort of sloppy and would be great on the bread.
Could also serve with some linguine....

It was delicious and could be made the day before or several hours and refrigerate, bring to room temp and bake.

Digornio Pizza.

1. Preheat oven to 400 to 450
2. Take frozen Digornio pizza from freezer and unwrap it
3. Feed wrapper to your dog
4. Cook pizza for 20 minutes and try to watch something on TV trying to forget you're hungry and have 20 minutes to wait.
5. Even though you're hungry, you forget about pizza for 6 or 7 minutes and burn it. Order out to eat.

There... there's what I'm having and how to make it. :D

I actually "cooked" for myself this evening. Tacos and refried beans. Yum! There's not much to heating up a can of refried beans, browning some ground beef, and shredding some lettuce and cheese, but still, it's more than I usually do!

If I told you my diet intake for the last 21 days (since I have been at The Fair), you would be disgusted.  For example, today I had a McDonald's Breakfast Burito around 9 am, and two sausage & biscuits (I had made days ago and frozen) around 3 pm.  Coffee before, in between, and after, and after again.

The answer is *no*.  It has been HELL.  This is my sixth time to work the fair and I have grown a lot older and sicker in that time.  It is just painful now.  I enjoyed the first few years.

Why do I do it?  If I told you the obscene amount of money I make in these 24 days, you wouldn't believe me.  I almost match half of my old yearly income. 

I know it is hard to feel sorry for me, but try.  Please.

I just threw out my leftovers (one serving of spaghetti--no great loss).

So now I have to cook for tonight and tomorrow.  Dead mammal barbequed sounds good.  Maybe a shrimp cocktail to go with it (remoulade sauce of course--no cocktail sauce for me!)

Chicken/pasta tomorrow--something easy.  It's gonna be chilly the next couple of days so I don't want to go totally insane with the outside stuff.

It's like anything else....must be done in moderation.

I only cook with butter....never margarine. Years ago, I had melted margarine in the microwave for something and forgot about it. Little while later, I remembered it and went to get it out. It was sooooo gross and nasty. Haven't used margarine since.

When I use her recipes, they taste great, but after I while I started to wonder why she uses so much butter and sugar in her cooking.  It's very unhealthy and good food doesn't always need to be loaded with fats and sugar.  But those two ingredients are the easiest ways to make things taste better.

I'm making a pot of chili.  I have to confess, I've never made chili before so we shall see how it comes out.

It will sit in the fridge overnight and is lunch for tomorrow.  I hope it's good, cause it's a lot and I'll be eating it for a while now.

For dinner, I'm having green beans, corn and rice mixed together with a litter butter, salt and pepper.  I might heat up some green onion sausage to go with it too.

To answer your question: Jack-In-The-Box is a restaurant. I don't know if they are in the northeast anymore since they had a controversy back in the 70's which pretty much soiled their reputation there. They used to be all over Maryland when I was a kid.  They had them in Arizona when I lived there and they had a real hodge podge of selections of food and most of it was really good greasy spoon stuff. The shakes were pretty good too.

As for dinner tonight, I am making pork chops, mashed potatoes, green beans, rolls, and a small salad on the side.

I dunno.. we have a whole freezer full of pork chops, pork loin, chicken breast, bratwurst, sirloin steak, round steak, bison (yes, bison, and it's delicious for buffalo Joes or Buffalo Chili), kielbasa, and more stuff. I think whatever the wife decides to make tonight, gotta have green beans and some garlic mashed potatoes to go with it. If not, McDonald's down the street is open until 1AM.  :-)

I love guacomole, but avocados don't love me. :bawl:

Not in 'that' way, they actually hurt my upper stomach something fierce within a half hour or so of eating anything avocado.

I accidentally bought crunchy peanut butter a couple weeks ago.  Damn stuff wouldn't spread at all.  I'll stick with creamy.

That actually sounds really good! I usually eat a slice of toasted flaxseed bread with natural peanut butter on it sometime during the day. Usually in the morning. Yummy!



For dinner, I think I'm going to make good old standby spaghetti tnight since I made a big dinner last night.

I used to do the natural peanut butter, then I got tired of trying to stir in the oil to the peanut butter.  Too much trouble.

I also like peanut butter with a little honey on toasted wheat bread.

I'm taking the lazy road tonight...we have NOWHERE to be, and Mr Flame borrowed Ironman from a friend at work, so I'm gonna do a frozen veggie lasagna and salad tonight, and we are going to have a movie night.   I might get a wild hair and make a loaf of crusty bread today, but we'll see.

Just me and the kidlets tnight so we are doing pizza night. The only thing to decide is in the home or out. I may see if I can rally my mother to go with us and we'll actually go sit down at the local pizza restaurant here and eat. Really depends on how much the kids are bouncing off the walls and if I want to deal with them in public given that :-)

Either way, it's pizza! I might get a wild hair like flame and make some banana and pumpkin bread. I also have some Pumpkin Ale with my name on it when the kids wind down for the night.  :cheersmate:
