What's for Dinner, Sun., June 22, 2014
Not sure here, but I will say one thing. This low-carb diet is a lot of work because I spend so much time processing vegetables--washing, chopping, etc.
But it's a great diet and easy to stick to because a) there are relatively few restrictions; b) I can have my glass of wine at the end of the day.
Now I would like to comment on cbayer's delicious cucumber soup. Very tasty. This will be a summertime staple for me, I can tell!
I did drizzle a little bit of heavy cream on top, but other than that, made it just like suggested.
For a variation, next time I will sprinkle mint on top.

1. Garlic Scape Pesto on Brown Rice Penne
With a side of fresh sugar snap peas. I am excited, it's my first time using garlic scapes. I bought it and them and the sugar snap peas at the farmer's market yesterday. Scored some honey from her, too.
Anyone have experience with scapes? I have enough to try some hummus as well.

2. Atlanta has this amazing market.
It's called Your Decatur Farmers Market.
It is enormous and under one roof. They have the most amazing array of produce, meat, fish and bread I have ever seen in one place.
Anyway, I have an excellent filet from there which we will grill tonight. Along with a spinach salad and some egg noodles in fresh chicken broth, we will have a feast.
And we are going to have a bottle of champagne because I quit smoking today.
Now, wait a minute, wait a minute, wait a minute.
She forgot to mention she's going to be spending three months in Italy.

Well, I have never heard of most of this stuff, at least that's what Judy thinks. That DUmmy quits smoking today and is celebrating with champagne tonight? She will just start smoking again. :whatever:

4. Stuffed bell peppers.
I'm looking at fillings - probably rice, bacon, cherry tomatoes, diced squash, chilies, shredded cheese. Broiled.
The peppers are baseball size, so it'll be like 3 stuffed bell pepper sliders for a meal.
I thought pinto was a guy.

6. smoked chicken
marinated some chicken in italian dressing
now they are on the smoker
going to roast some eggplant and garlic for a side dish
that really doesn't go well together.
