1. Indeed - tooo fast!
It seems like New Years Day was yesterday.
Tonight will be baby back ribs on the grill. Just made a mac salad, and I've got some baked beans waiting in the wings. I did a dry rub on the ribs yesterday, and once grilled, I'll put a BBQ sauce on to finish them up.
These are really good ribs, in that the grocery store doesn't shave the meat off down to the bone. It has a meat cap! As such, A 1/2-rack is usually too much for one sitting. Looks like I've got leftovers for lunch.

4. That sounds fun, going to watch the Oscars at a bar. We live in a small town that was still dry not too long ago. The only bar in town is a biker bar with zero hospitality charm, even as dive bars go! Have fun!

The one here caters to ex-pats and has a decidedly american sports bar feel, but tonight will be a bit more "sophisticated" (I hope).

3. Cooking three dinners tonight, to carry us through the week.
Also, because my SO cannot resist buying GIGANTIC packages of meat and freezing them without breaking them into smaller portions. Ergo, when it's time to cook with the meat, we have to thaw all of the (6 lbs of chicken thighs/three 3-lb pork roasts/10 lbs of hamburger) and cook it all at the same time or it will go bad.
So tonight we will cook a pork loin roast (which I am sick to death of, this being the fourth damn pork roast from one of his bargain packs), and make two dishes out of 6 lbs of chicken thighs. I'm making a slow-cooker white chili with half the chicken thighs but have no idea what to do with the other half. Thinking I might just bake them and strip the meat to make a quickie casserole or something. What DO you do with thighs?

What can we do?
6 pounds of thighs is a whole lot of thighs.
You could make a broth by boiling some of them just for 45 minutes or so. That would leave the meat still tasty and it could be used for lots of things - enchiladas, soup, chicken salad, sandwiches, and you would have the broth.
You could grill or broil some of them and eat them right away, otherwise the skin is just going to waste.

dad needs to swap a part on my car and sister is out of town, so it's a gluten fest tonight.

Between you and I, hate it when the Oscars come over. Have to doff the sweat pants or jeans and raggedy t-shirts. Wash every freaking dish in the house. Get into a suit, tie, shined shoes, etc. etc. Tell the neighbors to keep their territorial disputes to a minimum.
The list goes on.

It was good...... but I wish I had read your post about frittata with roasted red peppers.
I like that idea! And chorizo instead of plain sausage.

16. Stir-fry Beef with Hoisin Glazed Vegetables
The v**s are red, orange, and yellow pepper and zucchini and onion.
Made the rice already.
I have a terrific recipe for thighs. Will come back and post it later, after I find it.
Probably some Chinese dumplings for an appetizer.

It's an omelette with pasta in it. Not my cup of tea. If I want an omelette, I'll make one... with bacon, tomatoes, onions, chills, and cheese. She can keep her pasta. Ugh.

It is scrambled eggs mostly made in your oven. Under non-DUmmy conditions, it can be quite good.

I hate eggs, and I hate this Ms. Piggy. Philly, frank - she lives in Philly. I have a sizable dossier filed with the VRWC on this one, msanthrope, formerly pacoyogi, a DUmmy who spreads hate and discontent on all manner of web forums, usually those having nothing at all to do with politics, but she makes it that way.

I've seen it in some restaurants with potatoes now that you mention it. I'd rather have potatoes than eggs, but still not appealing to me either.

It's a quiche without crust is all it is. People on low carb diets love fritatta. Mine are usually eggs, sausage, bacon, and cheese. Maybe some onion.

Thanks for the illumination; I've seen her over the years hint herself to be an attorney in New York City (in the past tense) and a law student in Chicago (in the present tense).
But given that primitives lie even when telling the truth is rather innocuous, harmless, I just noted this contradiction in my head and was leaving it sitting there until the truth, which the truth inevitably does, comes out.
She's an odd case, with that screen name, as she appears to be enthusiastic about the currently most-mysogynist culture in the world.
