Potato Pancakes
   
I just made some for supper. Easy to shred in a processor but I've used the blender and like them smoother that way, too.

I substituted the egg whites with some yoke from a carton for the whole eggs. I also used more onion and just used some cooking spray for the pans. I do have more than one pan going at the same time and use a 1/4 cup measure to spoon them into the pans and flatten.

I serve them with low fat sour cream for him and apple sauce for me. It's the whole meal.

1. I always throw in more onion and I've discovered I like partially blended, partially grated potato. That means they hold together and still have a certain amount of bite.

I use an ice cream scoop to get it from the bowl to the pan.

I think I'm going to fix these for dinner tonight.

It all sounds like a lot of muss and fuss, and franksolich has never even heard of this sort of potato pancake.

One is compelled to wax autobiographical for a moment here; because our parents were always busy, my younger brother and I were most of the time looked after by our much-older siblings, including the feeding chores.  Resentful teenagers are not suitable dieticians for toddlers, and I suppose my dislike for all but the most basic, the most elementary, foods stems from these childhood experiences.

Once in a while however--but alas too rarely--one of the older brothers or sisters would make potato pancakes.

They would grab the bowl of leftover mashed potatoes out of the refrigerator, make patties out of them, and fry them in butter, on a cast-iron skillet.

That was it, nothing else.

I have no idea why primitives think things have to be complicated.

By the way, this time I took care to be sure the primitive links work (they don't always work), in case anyone wishes to check out the recipes for overcomplicated potato pancakes,

sounds a lot like latkes. I make those occassionally and they are really good.

This is a favorite in my family!  My kids love them, and when I was pregnant with my youngest, it was one of the few things I could eat without hurling!

But I do like "real" potato pancakes made with shredded raw potato....just takes much more work!

take mashed taters, mix in an egg and chopped onion, form into patties, brown both sides in butter in a skillet.  It takes fifteen minutes from notion to fork.  Don't forget the ketchup* (mixed with a generous dash of hit sauce).

*also maybe served with a fried egg on top.
