Oh my.

Skins's island is as boring as Hell this evening, so I went to dredge up something, anything, from the cooking and baking forum. 

It looks as if dear old sweet Lu laid down on the job again, and some other primitive had to do her work.  It's true that she has a couple of sisters visiting her--they're getting ready for Halloween, and trying to decide how many frogs' legs, spiders' eyes, and rabbits' warts they need for brewing up their treats.

(In case one doesn't get it, dear old sweet Lu is also the hostess of the witchcraft and sorcery forum on Skins's island, which she similarly neglects.)

But that doesn't excuse her from her responsibilities to the cooking and baking primitive.

She wanted the job (as hostess), and having gotten the job, she should do the job.

What's for Dinner, Sat., Oct. 5

We went out for dinner last night and there was so much food I won't have to cook today, although I probably will anyway, just 'cuz I like to do it.
 
First up will be bass over potato cake, topped with peach salsa and watercress.

Next up, a fish taco.

Salad is already made: red and green pepper, cukes, heirloom tomatoes from the garden, fennel sliced on the mandolin.
 
I'm soaking beans (cannellinis) to make tomorrow or put in the slow cooker overnight.

1. Taking my bride out for a birthday dinner.

Tomorrow, I'll do one of her faves...

Breaded cubesteak, mashed potatoes w/ gravy, steamed green beans with garlic butter and almonds.

Apple-pecan cobbler topped with vanilla ice cream.

Store bought ice cream as I lack the bandwith to make it myself on short-whim notice.

2. Ugly but tasty biscuits

I swear, mine always come out misshapen, but they taste great.

Steak, baked beans and salad.

And the ugly biscuits.

<<<had whole-wheat toast with real butter, and two-thirds of a half-gallon of milk for supper tonight.

4. Meatloaf

I love meatloaf... So much you can do with it. Tonight is ground beef/ground pork, onion, garlic, pepper, a little bread crumb & cream of broc soup all mixed together to make the meatloaf. Garlic mashed and gravy, some white corn and garlic bread.

5. Muenster cheeseburger and a salad - mixed greens, Romas, c****s, olives, red onion.

It's already 90 here, so I'll pick my way to dinner later on when it cools down. Usually hit our peak temp 2-3 PM.

7. Chicken Cordon Bleu. For the first time.

It looks super easy. I can't believe I've never made it before.

For those who don't know, corden bleu is similar with "chicken strips" that one buys at convenience stores, which is probably where the primitive got his.

8. I insisted on using Progresso Italian Breadcrumbs for my breading and put sliced green olives...

...in with the ham & Swiss.

It was one of my specialties.

9. Made a small ground chuck noodle casserole with garden salad.

Downsized to 1/3rd or this recipe. http://www.tasteofhome.com/Recipes/Hamburger-Noodle-Casserole
 
Substituted some shredded mazarella with a touch of milk for the ricotta (that I didn't have on hand.
 
Came out pretty good.

10. I remember now that I really don't enjoy cooking just for me.

I've had a really rough day. Seven hours of some of the worst swells I have ever been in starting at 5AM.
 
Everything is on the floor. Some things are broken. The generator fell over and spilled gas on the deck in the middle of it, requiring me to crawl to the foredeck and try to do something about it. Hyperalert, afraid at times and seasick.
 
Just a horrible day.

It's gotten much, much better, but I have no interest in cooking or eating.

Maybe a sandwich or something later.

Sorry to unload on you all, but it's pretty damn isolated out here right now and I just needed a few shoulders.

cbayer should eat a big can of tapioca pudding... followed by a good strong cigar.

What on earth is 'broc' and why would one put a soup made out of it into meatloaf?

If you don't know how to spell broccoli, you can just call it broc and avoid the potential embarrassment.

Yeah, that's the way many primtives get around their problem with illiteracy.

If you put broccoli in meatloaf, illiteracy isn't your worst problem.

I'm sure this DUmmy had to battle the urge to add a cup of peas.

He's her second husband, her last shot at a secure life-style.

She was married to some other guy first, and lived in an affluent part of Boston.

They had two boys, now adults, but might have had other kids too but she doesn't mention them.

She took to the bottle, and started neglecting the children.  One of them almost went bad, but was saved by some law-enforcement "scared straight" program; that was the one who, when smaller, used to have to go from bar-to-bar, searching for his mother so as to get his report-card for school signed.

Her first husband divorced her, taking the kids so they'd have a chance at life, but I dunno if that was before or after she moved to New Orleans, where she worked in a steakhouse and met her current husband, an eccentric Englishman who insists they live on a 300-square-foot boat so as to use less resources and save the planet.

The problem with that being they live on the boat, saving resources, only about a third of the time; the rest of the time, they're gallivanting around around the country and exotic foreign locations, renting expensive motor vehicles, staying in five-star hotel luxury suites, dining in only the top-rated establishments, using up far more planetary resources than if they'd just live in a house planted on the ground.

It's kind of like when college kids, wanting to know what it's like being homeless, camp out with all their Cabela's, L.L. Bean, Ben & Jerry's gear, and their electronic toys.

Eccentric English husbands aren't very good at that sort of thing.  At least that's what I've heard from my mother's side of the family.
