Making some lovely curry with rice noodles for dinner

I am absolutely in love with Thai cuisine... full of flavor, easy as pie to make, and gluten fee
 
Dice both onions and garlic, with cilantro and Basil, and sweat it in light oil, with salt, pepper, if you want it more spicy red chili flakes. Add Coconut milk, a can and add water to it, and then curry powder, we use yellow japanese powder. Then add your vegies, today diced carrots, and your protein, diced chicken thigh. When it is about fifteen minutes from ready add some stir fry noodles and let them cook. Today I added shitake mushrooms.
 
There are variations to this, Instead of the curry... add a couple spoons of peanut butter, you got yourself a peanut sauce. Or you can add red curry paste, as well.
 
It is easy as pie, and tasty and prep time from start to finish is 45 minutes, tops.

The center portion of the cousin's OP looks recipe-ish.  Surely someone as smart as :jugs: claims to be could figure out how to fix such a simple dish from that description.

Coming to the rotund one's defense.  I suspect her post was as close to the recipe as she can get.  Most of my cooking is some of this and a bit of that and about a cup of the other thing.  I usually follow a printed recipe the first time and start altering it after that.

I agree. gNads' did her best to tell the DUmmies how to make a simple Pad Thai, but PhDD was too dense to figure it out.
