Title: Crawfish (or shrimp) Butter Cream Sauce

This is soooo delicious and definitely not diet food.  You can serve it with rice or pasta or over fish.

Crawfish Butter Cream Sauce

1/2 lb butter
1 cup diced onion
1/2 cup diced celery
1/2 cup diced bell pepper

1 tablespoon chili powder
1 teaspoon black pepper
1/2 teaspoon cayenne
1/2 tablespoon ground cumin
1 tablespoon salt

1 lb crawfish
1/4 cup flour
3 cups heavy cream
1 cup water
2 tablespoons chopped garlic
1 cup shredded cheese (I use parmesan)


In a sauce-pot over medium heat melt butter.

Add onion, celery & bell pepper and saute until transparent.

Add all dry ingredients and cook until a think crust forms on bottom of pan.

Add crawfish and simmer for a few minutes.

Add flour and stir to thicken until a light roux.

Add heavy cream and water and return to a simmer

Remove from heat, add garlic and cheese.

This should go good with the pie. What a gal.
