Hey! What's for dinner - Wednesday, March 13, 2013.
I am making hamburgers (no buns) and braised endive baked with a béchamel/cheese sauce.
Happy birthday to number 1 son, who would love this meal!

2. Endive baked with bechamel/cheese
was a favorite when I could still eat cheese. I'm so bored. I baked chicken thighs with thyme and mashed a pot of potatoes. I would have sauteed a pan of Swiss chard to go with it, but Mr. Pup emailed that he had to stay late again at the office. He has had one full day off in the past month and his boss is a notorious wage thief. During busy times they will work 15-20 hour shifts (no overtime) and the workers who live farther away just sleep on the floor because they are too tired to drive home. They are working on four cases now and moving the office by the end of the month. I had chicken and potatoes when they were ready. He'll have his reheated the next time I see him--or, the time after that. This really gets old. Sorry, cbayer, you wanted to know what's for supper and all I have is bad mood.

Your chicken and potatoes sounds good and should cheer you up. Sorry you have to eat it alone.

3. It's the Grand Festival of the Leftovers featuring Vietnamese vegetables and rice noodles, pasta with asparagus, and pierogies with stir-fried red cabbage.

5. potato crusted salmon, asparagus tips, and heirloom baby tomatoes w/ argula. I wanted to make cream of asparagus soup (my fav Campbells as a kid), so I cut the base of the aspargus and boiled for the stock. Put in food processor and it was stringy and fibery as hell - so dumped it out. Wonder how Campbells did it ! haha

8. Lefftovers from yesterday... I finally made the shepherd's pie with horseradish potatoes on top.
All I can say is, YUMMY!!!
And very low in sodium, too -- I used a little Worcestershire to flavor the ground beef and about half-an-envelope of Lipton Onion Soup Mix.

My favorite memory of endive is when that little unibrowed midget DUkakis ran against President Bush.
Campaigning in Iowa, at a time when farmers were having a very tough time, he suggested they consider switching from corn and soybeans to Belgian endive. Tens of thousands of acres of Belgian endive. The breadbasket of democracy planted in Belgian endive, whatever that is.

Now I'm beginning to wonder if dear old sweet Lu is ill or something, and couldn't post her usual one-sentence original topic and run away.
On that, she's exactly like the big guy in Bellevue; both of them apparently think that just by "being," they're a gift to the rest of us, that they don't have to do anything else.
I wonder if she treats her husband, old bewhiskered Bill in faded overalls, that way.
Which has now given me an idea for a new story.
I have to first read up on what life's like in the southern Appalachians, say around western North Carolina, to make it credible, because I've never been there; dear old sweet Lu might not like it, but it's her own fault, she being the way she is, supposing she has no responsibilites in her job as hostess of the cooking and baking forum.
Don't get me wrong, as I like dear old sweet Lu, but she has a too-high opinion of herself, thinking she doesn't have to do any work.

I guess they have it at the grocery store, probably in that section of weird Central American stuff, like the big black banana-like things, and those things that look like slabs from a cactus plant, or the stuff that looks like red celery, or those things that look like brown fuzzy golf balls. Maybe one of those is endive.
Not exactly something you'd want to plant on ten thousand acres of farmland.

LOL...Endive is in the chicory family. Looks like fancy curly lettuce. Not great for eating (in my opinion). They put it in salads here. But to me it tastes bitter and like chewing on a stringy rag.
I've never seen it braised then baked with cheeze. But then I'm not a fan of cooked leafy greens, except for maybe cabbage.

The only way I've ever seen endives are dried crumbles of them, purchased at the grocery store in those little metal cans--in other words, something among the spices and herbs.
Sprinkled on top of potatoes, it's great.

Ingredients

2 Parts Apple Juice
1 Part Lime Juice
