When I make it, it is white with maybe a little green tinge.

And I love, love, love it cold (vichyssoises).

Just kidding. I think I use more of the green part of the leeks than you do.

3. Do you like it cold as well?

This is one of my favorite dishes and I was surprised how easy it was to make.

Great site, btw. I do, however, wish you would post the recipes here, then add a link.
 
Just my personal preference. My connection is often very slow and I won't open a link if I don't have to.

Well, well.  Sigh.

As a personal favor to the cbayer primitive, I went to the link for her.

Not that the cbayer primitive's going to like franksolich any more for doing it.

Leek & Potato Soup

This is a great recipe for those cold winter nights. The beauty of it is it doesn't require a lot of ingredients and you can whip up a batch in just over an hour--although, like most soups, it tastes better the longer you cook it.

Ingredients
4 leeks, chopped (white and light green parts only)
1 large onion, chopped
2 Russet potatoes, pealed and chopped
2 cans reduced sodium chicken broth
4 cups water
1 slice white bread
Pepper top taste
1 t thyme
Sour cream (optional)

Directions
In a large stock bot saute the leeks and onion in a bit of olive oil until translucent. Add remaining ingredients and bring to a boil. Reduce heat and simmer, covered for 45 minutes to an hour. Remove from heat and puree with a hand blender. Reheat and serve with a dollop of sour cream.

4. I was wondering that, as well. It's really unappealing

My own recipe is Julia Child's recipe of potato, leek, water or stock, and black pepper, either heavy cream or butter to finish. It's the easiest thing in the world, good hot or cold.
 
It's the color of the potatoes you used with an occasional pale green fleck of pureed leek.

5. I'm having a cup of it right now

And it's pretty green. I thought maybe I added too much saturation in Photoshop, but it's fairly close. The photo makes it look a little more yellow that it actually is. But like I said, I added a lot of the green part of the leeks.
 
I'll have to try it cold although it's pretty thick when it's cold.

8. You may want to thin it with more broth if you try it cold.

Some chives or snipped scallions on top make it even better.

<<<as a little lad, once had vichyssoise in some fancy restaurant in the Rocky Mountains of Colorado.

<<<squawked about it, so the tuxedo'd waiter had to take it back to the kitchen to heat it up.

9. I love leek & potato soup. I make it about the same, simple.

I've had it as is off the stove, a hot soup. Then reheated the next day and blended like this with some sour cream.
