I love beans.
Great northerns, Navy beans, black beans, pintos.

The secret to good lima beans is cooking them long enough (low and slow) and serve hot with butter and salt.
My mother never cooked them long enough and they always turned out with the consistency of wood chips. A neighbor in North Carolina showed me how to make them right.

This is a soup recipe but the ingredients are the same. Adobo seasoning is ground guajillo chiles, garlic, cumin, and salt.
4 cans (15 oz. each) Black Beans
3 slices, rough chopped Bacon, Sliced
1 tbsp. Olive Oil
1 bottle (12 oz.) Beer
½ cup Water
1 tbsp. Sherry, Dry
¾ cup Onions, diced finely
½ cup Green peppers, diced finely
2 tbsp. Garlic
¼ tsp. Ground Cumin
2 tsp. Tabasco sauce
To Taste Adobo seasoning, salt and pepper

I'm Cuban. When do we not have beans on anything? Rice, beans. Pulled pork, beans. Cereal, beans.
We need all those extra gases to float to America.

Now, I LOVE beans, just not in my chili. I make a killer Navy Bean Soup. :-)

JEFF’S BEAN SOUP
INGREDIENTS
1 pound dried Great Northern beans
1 meaty ham bone or 2-3 smoked ham hocks
3 medium onions, chopped
3 garlic cloves, minced
3 celery ribs, chopped
1 cup mashed potatoes or 1/3 cup instant potato flakes
1/4 cup fresh parsley
Salt & pepper to taste, parsley or chives for garnish
Soak beans according to package directions, usually overnight.
Place beans and enough water to cover in a saucepan; bring to boil and boil for 2 minutes. Drain & rinse beans, place in large kettle, add ham bone or hocks and 3 quarts water. Bring to boil, reduce heat, cover & simmer for 2 hours. Skim fat if necessary. Add other ingredients and simmer for another hour. Remove bone or hocks to cut meat from them. Dice meat and return meat to kettle. Simmer for another hour, stirring occasionally.
Serves 8.

PIZZA PINTO BEANS
1/2 lb pinto beans, soaked overnight, drained
1/2 lb ground beef 2 yellow onions, peeled & chopped
1/2 cup spaghetti sauce 1/4 lb pepperoni, sliced
1/2 cup fresh grated Swiss cheese
1 tsp oregano
Cook beans in 1 qt water until barely tender, about 1 hour. Drain & place in casserole. In a frying pan, cook ground beef w/the onions until onions are clear; drain any fat.
Add meat and onion mixture to casserole, along with the spaghetti sauce and pepperoni. Top with cheese and oregano. Bake at 375ºF for about 25 minutes, until hot & lightly browned.
Serves 4 or 5.

BLACK BEAN DIP
1 can (15 – 19 oz) drained, rinsed black beans
4 peeled garlic cloves 2 tbsp tomato paste
2 tbsp olive oil 4-1/2 tsp fresh lime juice
1/2 tsp ground cumin 1/2 tsp ground coriander (cilantro)
1/4 tsp salt 1/8 tsp ground red pepper (cayenne)
In 1-qt saucepan, place garlic and enough water to cover, heat to boiling over high heat. Reduce heat to low, cover and simmer 3 minutes to blanch garlic; drain. In food processor, with knife blade attached, blend garlic with remaining ingredients and 1 tbsp water until smooth. Spoon dip into bowl, cover and refrigerate up to 2 days. Makes about 2 cups.

Jeff's Bean Soup recipe sounds real good. I'd add a little diced carrot. I like the color with bean soup.
The pizza pinto beans.....um, not so much.

I don't like Great Northern or Navy beans. Pinto beans, black beans, black eyed peas & even Lima beans are fine by me. They ALL have to be cooked properly, though.
