Darn but I have a hankering for some taco's I first had made by a family, the woman was Navajo and husband Mexican.
Very simple, the corn tortillas were canned, cooked in oil until soft. Filling was hamburger, tomatoes, shredded lettuce and sharp cheese with Old Al Peso sauce. Darn grease would run down your chin. No sour cream or avocados, just the amazing strange taste that a Yankee that ate bland meals would encounter.
Only 17 years old and the beginning of my life outside salt and pepper spices only. I have tried them all since then, learned to LOVE the hot stuff, yet as often as I try I cannot duplicate the very first .
Mind you at that age way back then I had never eaten American Chinese food and only once had BQ ribs------ Daddy why are we eating bones ???
First time I ate Pizza was when dad brought some home with anchovies and I did not even think to try it again for 3 years .
Children of today eat everything from Sushi to highly spiced Indian food and some stuff I never ate to this day. I, my food was just meat and potatoes and salt and pepper. Yes we did eat monsters, Lobsters, and clams, but the only spices or favoring was butter and lemon.
In a way I wonder if I could eat the original Taco's I remember would taste the same to me now. I loved grandmas beef stew never could get the same taste I remembered from my childhood. After 20 years or so I went home and asked grandma to make me up a batch,----- darn , I guess a hungry child will eat and remember the taste. Taste buds had changed in all those years.
Only thing that tastes the same is Pancakes and pure Maple Syrup, Bacon and fried eggs.
Rats, I want me some taco's but will never get what I remember.

If you ever have the opportunity, have mexican food made with barbacoa instead of ground beef. If it's done right, you won't go back.

First, the head of a cow or goat meat is wrapped in maguey or banana leaves.
A cauldron of hot water is placed in a pit about 3 feet deep with hot coals in the bottom. A grill is placed on top of the cauldron and the meat is placed there. Vegetables, beans and spices are sometimes added to the pot for a soup. The pit is then sealed and covered with damp earth.
Traditionally, the type of meat used is from the head of the cow. Lamb or pork is also used.
Nowadays "barbacoa" can refer to meat that is just slow cooked and tender.

We had a taco place down the street from us in Fullerton, they made their tacos the way Wineslob says. My husband loved it, I couldn't tell if it was dog, cat or whatever so I always asked for ground beef.

We have a local taco place (called "The Local Taco", obviously). It's like an upscale taco truck except they serve beer and have tables. Their spicy shrimp tacos are great. The Korean BBQ tacos were okay but a little dry.
The closest taco truck is on the corner over here by the barrio. I haven't tried it because I don't habla Espanol and I don't want to hang around in their parking lot long enough to read the menu.

Just ONE taco place? C'mon, it's Fullerton. Dead cats, hit a dozen, shit like that.
Although I'm bummed that if I ever go back to CA (unlikely at best) that Anita's is closed. One less reason to go back. But there's still Chronic Tacos. Maybe.

I made a chili with smoked brisket. It was DIVINE!!! I also made some machaca once. That turned out pretty awesome, too. I guess it's the Texian in me. :-)

My favorite were found in Tijuana at a streetside vendor. They piled up the meat on a vertical spit, as one would do to make a Gyro and cooked it with the same type of device. They were AWESOME!!! Never got sick from that place, either. My next favorite is Carne Asada tacos and finally, fish tacos (both kinds!!)!! (That could wind this thread up in the Short Bus in a damned hurry!! LMAO!!)
