Title: Harris Ranch Short Ribs
Post by: Revolution on February 15, 2011, 07:08:15 PM
In heavy BBQ Sauce. Not sure how they're prepared, but I have never been in love with a food like this before. I kid you not, CC. You don't even have to cut the stuff.  It falls off of itself! I salivated, and at one point, I think I was aroused.

I want to die eating this stuff.

I'll make my own style of ribs, TYVM. The upper Midwest is just about the absolute WORST place in the US for BBQ, except maybe the Norheast.

The left one. I kid you not, I strongly advise getting these if the spirit moves you. Ribs are always something I tend to f*ck up on my own, so I'm keeping these in consideration in the future.

Of course you do. You're a Yankee......  I refuse to pay triple or quadruple the price for something I can do myself.

Revolution, this here is what ribs are supposed to look like.

Feel free to use this as a reference point in the future.

Let's not lose sight of the fact that Rev was talking about short ribs - not babybacks.

I don't profess to be an expert - unlike most of you Rebs - but short ribs generally have to be braised rather than smoked/grilled. The cooking process varies with the meat, so too will the result vary.

Just sayin'.

Rev, if you enjoy that type of food, good on ya. Don't let the purists detract from your enjoyment.  ;)

Eh, you can do beef ribs in a pit. They'd take about 10 or 11 hrs. to cook, whereas, baby backs take about 6 or 7.

Cool.  I'll start digging a hole in my backyard as soon as I get home.  I bet my landlord will be thrilled. :-)

Okay, fine. I don't deny that short ribs can be bbq'd.

How often does one braise babybacks? I submit, probably not ever. Most of the time, short ribs lend themselves to being braised.

And it appears to me that the Harris Ranch short ribs are braised - not bbq'd.

I think these were special orders though. A friend got them for us that lives way out in Cali, because they heard what was going on in the family. A touching, and yummy gesture to say the least.

And Odin: I am now extremely hungry for your babyback ribs.

Awww, come on. Rev is from the area where they think ketchup is a spice.  :lmao: :lmao: :lmao:

Eupher, next trip down, beef short ribs will be on the venue. And yes, they CAN be done on the grill or in the smoker quite easily and come out very good.

Rev, that was a nice gesture by your friends. I can't fault them for that.

I just remember a day that I was being lazy and my smoker hadn't been set up and I looked at some oven ready baby backs. The price was $11.00 for ONE rack of ribs!!! I could buy THREE racks of the same ribs for just a couple of dollars more.

I gave you a h5 Rev for having the courage to tread into the territory of 1)  ribs, or 2) chili.  Both are very dangerous minefields, with fighting words amongst purists and snobs ensuing.
Also to help even you out.  Also for having great friends!

Anyone see "The Big Bang Theory" last night?

"Sheldon" (Jim Parsons) - both the actor and the character he plays are from Texas - was asked if he wanted a bowl of chili made by a girl from India.

He asked if it had beans in it, she said of course. He said then it's not chili.

She asked him again if he wanted some and he said he would try it. He took a spoonful and said it was good - but it wasn't chili.

Was like watching a live discussion of CC regarding beans and chili..... :thatsright:

I HAVE NEVER KNOWN THAT CHILI DID NOT HAVE BEANS IN IT, never had anything called chili without some kind of bean.

I would like to know how chili can be made without beans, we Yankees are after 100 years just getting use to the spices in chili and darn if this is not a head banger.

REAL Chlli= "Chili con Carne" in Spanish. "Carne" means meat, typically beef. True to the meaning REAL Chili won't have beans. It will have Chilies & beef as the main ingredients, along with whatever other spices were available on the chuck wagon or on the trail. Now I know how you damned Yankees like to bastardize things and that's probably WHY you've never had REAL Chili.
