Does anyone know how to set up a blog where I can control just who all sees it? it must be very simple.
I feel the need to document this "trip" I'm on. But There are things I don't want just anybody to see.

Ree, I don't think one can control who see their blog, but if you don't advertise it, then I doubt it will be seen by many. Go to my blog, http://thors-spot.blogspot.com/ which I haven't done in a while and in the upper right corner of the blue strip is a "create blog" link. Click that and away you go. You could just also write it in MS Word, in a journal sort of manner.

I don't want any chance someone could find it and read it

I think LiveJournal (livejournal.com) might have an option of locking your blog to readers, but anything that is posted on the internet could probably be found and read by somebody determined enough. Thor's advise on writing in Word might be best if you are concerned about security.

yeah stick to writing it in Word on your PC and not on the web.
I just started a blog but it's not locked down. but I could do this - http://codex.wordpress.org/Content_Visibility

If you really don't want anybody to see it, just make a journal in MS Word or hell, even Notepad, for all that matters.

Set up a myspace account, and don't have friends, and set everything to private. You can post daily blogs that no one can see. Even if you have friends on myspace, blog entries can be marked private, so that only you can see them.

What's the point in having a web log (blog) if nobody can read it??
