Uh, you have tasso, or you wanna make tasso?  If you have it, and need to move it, just smoke it!  Or, you could just eat it, I have a fabulous red beans and rice recipe.

Tasso is basicly a pork chop smoked dry. It, like smoked sausage, is basic south Louisiana seasoning meat for gumbo, red beans, and other good Cajun cooking.  :drool:   :yum:
