Chocolate chip instant oatmeal
I often eat oatmeal for breakfast. Today I had some chocolate chip instant oatmeal that I got at Costco under their house brand.
As I was eating it and biting into the chocolate chips it occurred to me. These chocolate chips had soaked in boiling water. They had lost no integrity.
Kinda scary, no?

2. As I was finishing up, they started to get a little soft.
But no. They mostly stayed intact.

3. Chocolate Chips are formulated to have a higher melting point than baking or eating chocolate. I imagine the oatmeal mfg did a lot of testing to formulate them so that they'd hold up during their recommended prep time. If do an experiment of melting both some regular chopped eating or baking chocolate and some chocolate chips, you'll find that the chips take longer to melt. Partly that's due to their density and partly to the amount of lecithin (and possibly other ingredients). I can't find an ingredients list for the item so I can't tell you what helps the chips hold their shape.

I had a bowl of plain oatmeal that I microwaved then shaved some bitter sweet chocolate on top. Not a lot...just a small pile. I grabbed about a teaspoon of sunflower butter and mixed it all together.
Pretty yummy!

But, I love a pat of real butter, a bit of brown sugar, a sprinkle of cinnamon and a splash of milk on my oatmeal!

Not scary at all.
I make brownies with chocolate chips in them. When my batch is done, not all of the chocolate chips melted. It doesn't make them bad. The brownies taste delicious and I'm still alive. It obviously won't kill you.

Yet after spending 47.65223 years suck-starting a bong, smoking dope, swilling booze, screwing any and every 2-4-6 legged creature in the universe, you can still look in the mirror with creamed oats crusted on your lips, and feel emotionally normal.
