Title: Carrot Cake mishap
Post by: BEG on September 08, 2010, 03:55:50 PM
I'm making my husband a carrot pineapple cake for his birthday today. I forgot to put the pecans in the cake. Will it ruin it?  I like the taste and texture of pecans in carrot cake.

It's definitely  ruined, send it to me for proper disposal and make another one the right way.   :-)

You could put them on top.

Have you tried candied pecans?  They're great.  Toss a handful of pecans in some light Kayro syrup and lay them out flat on a tray covered in parchment paper.  Put the tray in the freezer for an hour or so and you have candied pecans.  You might need to shake them in a Tupperware container to break them apart since they like to stick.
