Canning woes

I bought 4 boxes of peaches from local scout group for their fundraiser (90 lbs in all). Ended up with 2 boxes each of big yellow skinned and smaller red skinned peaches.

After 2 days I noticed flies. The yellow skinned ones were so big they'd gotten flattened when they were stacked so I quickly canned what I could get out of them, giving about 1/4 to the chickens.

I've been checking the red skinned ones, waiting for optimal ripeness. Last night I noticed flies. Turns out most of the second layer of peaches were grey, weeping, etc. So today I quickly canned what I could get out of them, giving about 1/4 to the chickens.

The chickens are happy, my pantry now has peaches for winter. Next yr I will not wait for them to ripen but either fill the frig with them to hold or can them right away. Poor chickens.

1. There is an old saying...peaches have 2 stages...ripe and rotten. Next time can them immediately and you'll fare better.

3. I have learned from this indeed. It makes me angry that not only do I have less for the winter, but that I ended up paying so much with that many going bad. However, they will turn into eggs. But still, live and learn.

Hopefully, the next DSM (Diagnostic and Statistical Manual of Mental Disorders--it would be the DSM-VI) will list it.
