I have fresh Trout. I usually cook in pan with butter. Looking for other ideas, so I ask you all here in the Cave!

I just got back from a camping/fishing trip. My wife loves trout, and, lucky for me, got a few fish (Browns). I've tried trout all kinds of ways. However, the plain old, simple, butter, salt, pepper and garlic in a frying pan is still the best. You just can't beat it. Those fish were excellent.
I don't screw with what works.

butter, salt, pepper and a frying pan................duh!!!!

A touch of seasoned salt. Maybe a dash of cayenne as well.

Have you tried Tout Almandine?
For 4 servings
4 trout fillets
flour for dusting
1 stick of butter
2/3 C slivered almonds
a tablespoon or so of fresh lemon juice
salt as desired
Melt the stick of butter in pan until melted and barely
bubbling..
dust the fillets with flour, shake off excess. Let rest while you
put almonds in butter and lightly fry both sides. Remove nuts,
put fillets in, squeeze lemon juice over fish, cook until light
brown, put nuts back in and heat thru.
Serve fillets with the nuts and butter covering the fish. Takes
longer to read this recipe than to cook...fish cooks quickly, but
keep the heat medium.
This was the recipe i was looking for. I had forgot exactly how, found it. Pan fry is the best. We have a creek in the front yard and back yard. Trout mmmmmm :-)

Shades of youth.
Grandma cooked fish this way when we spent the summers on a lake in Maine.
Both trout and white pearch, fantastic.

I adore trout almondine, and will always get it if it's on a menu. A friend of mine did the trout this way, for an outdoor cookout:
Lay a trout on piece of foil
Lay lemon and onion half-moons in the cavity, with S & P and butter chunks
Fold up together and seal.
Grill for about 15 minutes.

A sprig of dill in the body cavity while sauteing in butter (garlic's a bit too much for this light-tasting fish, imho) works well.
