Some may call the wild leeks by the name Ramps.
This sound weird but it is very good.
Leek Pie:
1 Pie Shell
1 Lb# Italian Sausage
1/2 Lb# Shredded Cheese ( of your choice)
1/2 cup chopped leeks (use bought leeks if no wild ones or green onions will work)
1/2 cup green peppers
4 eggs
Mix all the ingredients together and then place in pie crust
Bake @ 450 degree for 10 min
Then turn heat down to 350 for 30 minutes .
Remove from oven and serve after cooling some.
Actually it is even good at room temp.

I have never eaten leeks.
I will have to correct that short coming if I can find any at my local grocery.

very similar.
leeks have a larger bulb at the bottom than a green onion. the flavor is a bit different.
they are very good.....

On Steroids. They are way big.

Wild leeks or ramps as some call them, are much stronger than ones you get at the store or produce markets. I actually like them much better.
Actually, you can eat this dish for breakfast, lunch or dinner.
It is simple to make and done with in an hour from start to finish.
If you try it, let me know what you think. Hope you enjoy it.
oops! I forget to mention , do not fill pie crust completely full. Leave room so it doesn't over flow the pie shell.
