I do corned beef in a big pot with red potatoes, carrots, onions and cabbage....it's tradition!

What is "grey" corned beef?

What is "grey" corned beef?

The "good" kind.  Don't worry, I never knew much about it until I moved to New England myself.  Apparently saltpeter in the brining process is what keeps corned beef red.  Take it out and it's grey, HOWEVER, it doesn't have that salty taste either. 

I won't eat it any other way now, if I have a choice.

I'm pretty sure none of your grocery stores will have it.  It's hard enough to come by here, and most places are butcher shops where you have to put in the orders ahead of time.

We don't have butcher shops around here. They might have it at EarthFare....but I went there last week and after seeing their prices...I won't be going back.  :o

That is why I consider myself fortunate to have a friend to brine his own.  He also does hams.  LOVE!

Then you could always make your own brine, just don't use the saltpeter, sodium nitrite, or whatever they tell you to use as preservative.

I've thought about doing it myself before, but the cuts of meat we get are so iffy...I'm hesitant to spend the money and the effort.

I just buy the ones already done. I usually do two because they shrink up so much.

Well. As long as ye sport Orange on St. Paddy's day then I guess haggis is acceptable. :-)

The Tuetonic tribes don't celebrate St Patrick's day. They were more apt to rape, pillage and plunder the Green Isle.  :-)
