Finally a reasonable discussion in the cooking and baking forum.
Apparently the powerful anti-milk lobby hasn't seen this yet.

Don't know what possessed me...
A few days ago I got this incredible CRAVING for milk...and none of your 2% stuff (my usual brew-of-choice)...I was hankering after the REAL thing.
So I splurged and bought a quart of "Vitamin D" (whole) milk. Tasted it...
Close, but no cigar. Not quite what I was really wanting...something like the richness you get in a good vanilla ice cream, but without any sweetness or other flavoring.
Hmmm...howzabout this? Picked up a pint of table cream. Just...plain...cream; no sugar or anything added.
After I got it home, put my finger in and taste...BINGO!
Knew I was on the right track. Mixed the milk and cream in a 3:1 ratio and heated it gently until it was just steaming.
Oh, man. I do not remember tasting anything quite...so...RIGHT.
Not something I'm gonna do on a regular basis, and honestly, I don't see that I'd WANT to...it is awfully rich (read: lotsa cholesterol).
I just enjoy being able to 'hit the spot' without too much experimentation and frustration when a weird craving turns up.
I put about a teaspoon of cream down for the cats...told them they were officially spoiled, getting CREAM.
Only Riktor appreciated it...the others gave me a "WTF?" look.
They really ARE spoiled...

5. The good news about butterfat is that it's not only better for you than hydrogenated vegetable fats, it's turning out to be slightly better for you than olive oil.

Since I've recently rediscovered my old Julia Child cookbook, this is really great news to me. That once a week butter laden French stuff I'm doing isn't quite as bad as I used to think it was.

6. Good news indeed.
My husband recently brought home some "I can't believe it's not butter light" when I asked him to pick up butter! He just doesn't get it.

2. I had a latte made with whole milk the other day
I think it's been about a year since I've had "real" milk. It was rich and thick and felt sinful. I love plain cream whipped too without sugar or flavoring....Especially on flourless chocolate cake. I've been thinking of making this for the SO for Valentines day.... For him....of course.

3. Once in a great while...
we get a pint of cream from a local dairy.
A little gets whipped as just lightly sweetened cream, and the rest gets made into butter.

4. I always have cream in the house...
...because I use it in my coffee. Every day. About 2-3 T a day. With all the gustatory deprivation I have to suffer, it's my indulgence. I never thought about drinking it straight, LOL.
I remember as a child my grandmother would regularly whip cream for hot chocolate, and serve it with buttered toast. That first sip of cocoa through the layer of cream, and then a bit of toast dipped into the cup. Wow. Thanks, cows everywhere!

I'm recalling the milkman bringing the glass bottles with the thick layer of cream on top. I loved getting the milk out of the milk box on those cold frosty mornings when it was just about to turn icy.....

10. Hey smiley, how's it going?
Can you eat everything and all things yet? I have two spots that still just really, really hurt. My dentist says he could just grind away the bone, but that freaks me out.
I'm still on mushy foods and it been over a month. I try and eat meat and it HURTS. I think you are a week or so ahead of me.
You'd think I'd lose weight, eh? I gained 5#.

My daughter is a skinny little thing-not even 25lbs at almost three. She's healthy, but the doctors have told me to continue to give her whole milk and try to get her weight up. While shopping at Whole Foods, I found old-school milk in the glass bottles, straight from a local dairy. I bought the chocolate milk (kid hates white milk, guess she's a racist) and OMG, it was phenomenal. It was probably one of the best things I have ever tasted.
I'm not big into the whole organic-food scene, but that milk was like a party in my mouth. If I could have it shipped directly to my house (the dairy doesn't deliver here for home delivery) I would.

Years ago I was told to drink raw milk to gain weight. I found a farmer that was breaking every law one could think of by selling the stuff to just a few people in the comunity. They milked by hand, then strained the milk, chilled it, bottled it and sold it for half the cost of store milk.
I quart bottle with about 2 inches of cream on the top. Sweet Mary it took me over a month to learn to tolerate that stuff, really gave me problems if I drank more then 1/4 cup----too rich.
Once I became use to it, this went into every recipe calling for milk and my low weight baby started to gain a few ounces a month.
I stopped at my Moms for supper and she had milk from the store at the table. That stuff looked like it had a blue tint. Watery, no taste, really Tuckie.
Today with all the antibiotics given to the cows, the hormones and what ever, I don't think I have tasted real milk in 30 years.
Or eaten a real farm raised free range chicken or raw eggs, or raw hamburger
It is no wonder that when I visit an ageing relative and they cook for me my favorite dish as a kid, it never tastes like I remember it. Darn even sea food tastes different. All the pollent in the water YUCK.

Actually, that's what caught my eye about this campfire; by sheer chance, there's only one anti-milk primitive at it.
Usually, wherever milk is discussed on Skins's island--in any of the forums--the monolithic anti-milk lobby goes into gear, the anti-milk primitives clobbering the pro-milk primitives.

A couple of years ago I bought some organic whole milk to try and it was definitely better than the regular brands, at least to me. It tasted more like the milk I remember drinking as a child. I don't know if it is the butterfat content or what, but I'm spoiled for it now. The regular tastes watered down. Of course, it's more expensive but I don't drink milk that often. Also, the expiration date on the organic is always 4-6 weeks from the time you see it on the shelf, whereas the regular always has an expiration date of abut two weeks. Don't know why that is.

I agree with Dandi- the expiration is always at least a month out, and I've found that it sometimes lasts a week or two after that. I've tried other organic milk, but so far this is my favorite.

Raw milk from GRASS FED cows (most producers of raw, organic milk have grass-fed cows) has the 8 essential amino acids our bodies can't produce (and we need these 8 to manufacture the others. Milk fat from raw organic milk has a smaller molecular structure and is more easily digested. And it's also a good source of CLA (Omega 6 fatty acid). Not to mention it just takes damn good. Kind of like having farm fresh eggs, once you have farm fresh anything the stuff in stores is a poor imitation.

When I do buy organic milk, that is what I buy. I sometimes buy their boxed milk singles to keep around in case I run out of regular milk, or to take in the car for the kid-that stuff is shelf stable and lasts a good long time.
Now that I have had the fresh off the farm stuff in glass bottles, it's hard for me to drink anything else. I can just tolerate regular store milk on cereal, drinking it straight is hard. And as for that skim milk crap...pffft. Milk shouldn't be blue. I only drink two percent because whole milk would be killer on my cholesterol.
I may look into the raw milk thing. I wouldn't mind trying it.

When I used to go to the Strawberry Bluegrass Festival, there was one vendor there with an expresso machine/steamer. He made all milk drinks with "Extra Rich Milk". Damn that stuff was good, if you could tolerate the wait in line.

I saw from Canada where it is apparently illegal to sell or drink raw milk. A dairy owner had 200 people who wanted raw milk so he found a loophole. You can drink raw milk if you own the cow. He sold them all a share of the cow, the courts agreed it was okay.

Guess I get to agree with a DUmmie or two on a thing or two, also.
I tend to go with eating things as closely to their natural state as possible and your body'll tell you what it needs sometimes.
Grass fed beef or wild game. Raw vegetables, whole milk, eggs from friends with chickens, whole grains. And, lucky for me, my body tells me I need chocolate chip cookies once in a while, too!

I seen it marketed "for pet use only" or "not for humans" in health food stores around here. But even my sister pasteurizes her goats milk.

Apparently there is a technique used by some farmers which pasteurizes the milk, but doesn't process the milk as badly as the commercial dairies. I can't remember what it's called, I'll have to Google it.
