BACON COOKIES!!!

OK, I'm not ready to give up on the chocolate chips but I'd make these. Though I'd be sure to use the real BACON!

Bacon, Cereal, and Orange Juice Breakfast Cookies

- makes 12 big cookies -

Ingredients

1/2 cup butter, room temperature
1/2 cup brown sugar
1 egg
2 tablespoons thawed frozen orange juice concentrate
1 tablespoon grated orange peel
1 1/4 cups flour
1 teaspoon baking powder
6 strips bacon or v****e bacon, cooked very crisp, drained and crumbled (I used v****e bacon and it worked just fine)
1/2 cup Grape-Nuts

Procedure

1. Preheat oven to 350°F.

2. In a medium bowl, beat together butter, sugar, egg, orange juice concentrate and peel, until light and fluffy. Add flour and baking powder, beating until well blended.

3. Stir in bacon and cereal, stirring only until incorporated.

4. Using an ice cream scoop (I used a big one), drop 3 inches apart on ungreased baking sheets.

5. Bake for 10 to 15 minutes or until edges are golden. Remove cookies from sheets while still warm and cool on racks.

I'm cooking the bacon right now.....Guess what I'm making this afternoon. I just got back from the store with the grapenuts and OJ.

14. DANGER DANGER

I have entered carb overload....

I got Thirteen really large cookies from this batch. I'm working on my second one while they are still warm. They are FRICKEN delicious. Orangy and crunchy and soft and chewie all at the same time. Strong Butter undertones with a hit of yummy salty bacon in every bite. If you like the sweet and salty thing...This one is a keeper.

the recipe sounds good until the bacon and grape nuts were added....

just in case the greasy bacon doesn't make your lower intestinal tract go into overdrive...the grape nuts will make sure!!!.... :o
