Okay, these are the cupcakes I made last night. Delicious! OMG it was heaven in my mouth!
It's a Paula Deen recipe. She says it makes 24, so I added another 1/2 on to the recipes and came up with 32 cupcakes.
Ingredients
* 2 1/2 cups all-purpose flour
* 1 1/2 cups sugar
* 1 teaspoon baking soda
* 1 teaspoon salt
* 1 teaspoon cocoa powder
* 1 1/2 cups vegetable oil
* 1 cup buttermilk, room temperature
* 2 large eggs, room temperature
* 2 tablespoons red food coloring
* 1 teaspoon white distilled vinegar
* 1 teaspoon vanilla extract
Directions
Preheat the oven to 350 degrees F. Line 2 (12-cup) muffin pans with cupcake papers.
In a medium mixing bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar, and vanilla with a handheld electric mixer. Add the sifted dry ingredients to the wet and mix until smooth and thoroughly combined.
Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in oven for about 20 to 22 minutes, turning the pans once, half way through. Test the cupcakes with a toothpick for doneness. Remove from oven and cool completely before frosting.
I used cream cheese frosting, topped with red sugar sprinkles and a cherry.

Now, I'm confused.
If you made the recipe using 150% of the required ingredients, you should've come up with 36 cupcakes, not just 32.
Or did you just make extra-large cupcakes?

Probably I filled the cups more than they did in the test run or they had slightly smaller muffin pans.

You know, my maternal ancestress was a graduate of the Bellevue Hospital College of Nursing in New York City.
In those days, nurses were given caps, and proudly wore them.
Bellevue nursing caps looked like upside-down cupcake papers; really cool.
Forgive me for getting off topic; the snow and ice is unrelentling, making me erratic.

You can use the cream cheese frosting recipe for a cake, just double it. Actually I think I put 1-2 tsp of vanilla, and it's really that for that doubled. I like vanilla though. :)

Don't you just love Paula Deen recipes?!
I made her applesauce bread and pumpkin bread recipes for Christmas presents. Had extras left over, M ate the applesauce bread and said it was really good and I ate the pumpkin(he doesn't like pumpkin)...it was the best I have ever had.
Her lemon bars are to die for..... :drool:

FD&C #40 is made from coal, not insects, and the red dye I use to make red velvet cake is #40.

You're right about FD&C#40. I think that insects would be safer to ingest than coal by products.

You know we're all going to die some day. But then again, I'm a smoker so I really don't care. Bwah.

The FDA has a list of "impurities" allowed in specific food items available on their website, like x number of insect segments, hair, and feces. It's an interesting read but not something to linger over.
Oh, and the cupcakes look lovely.
