Okay, I'm definitely going to have to try that. Sometimes they peel so easily for me and other times I chuck the egg because it comes off one miniscule piece at a time. It's frustrating!

I crack the shell all over, then peel it off while trying to keep the "skin" underneath as intact as possible.  I can usually keep most of the shell and "skin" together

Yeah....  But's a low boil.




All boiling is basically 212 degrees.  If the water gets hotter, it turns into steam.  In a furious boil, the steam bubbles would be significantly hotter than 212 and might be coming thick and fast enough to impact the food being cooked, but slow or fast is very close to the same water temp. either way.
